Ingredients
4 cups sweet potato cubes
4 cups zucchini cut into quarters
14 oz extra firm tofu cut into cubes
2 tbsp avocado oil
1 tbsp sesame seasoning for the tofu
steamed broccoli
4 cups broccoli florets
water for steaming
1.5 cups jasmine rice- used Trader Joe's premade frozen
sauce
1/4 cup runny almond butter
1/3 cup vegetable broth
1 tsp very finely minced garlic
1 tbsp coconut aminos
1/2 tsp sriracha
1/2 tbsp dijon mustard
Instructions
for the broccoli, place 1/3 inch of water in a saucepan and bring to a boil. add the broccoli and steam 5 with the lid on.
the broccoli is done when you can pierce it with a fork but i like mine slightly crunchy still.
for the rest of the veggies and tofu, coat with avocado oil and the tofu with sesame seasoning if desired and bake at 400 degrees for 30 minutes.
warm up the rice and then whisk all the sauce ingredients together until a smooth sauce forms. serve warm and enjoy!
