back making my favorite cookie combination in the entire universe…. chocolate chips and tahini. they go together like no other combo and even if you’re not the biggest fan of tahini, i would still give this a try. it’s warm, gooey, soft like a cloud, dense and just slightly under-baked so you kind of feel like you’re eating cookie dough.
if you need some more convincing, it’s basically a giant cookie that you make in a cake pan. the dough itself is super thick, just like a cookie rather than cake batter.

i added more chocolate chips to the top becauseeeee….why not and you could totally add a chocolate or vanilla buttercream. omg, yum. does anyone remember or still buy cookie cake at the mall? oh my gosh, that was my go to back in middle school and high school, i was obsessed with them!!

i mean they taste flippin’ great but definitely not vegan and i believe in all of the treats, just usually like to lighten mine up a bit with more wholesome ingredients. you won’t miss the mall cookie cake with this gem. Vegan Chocolate Chip Tahini Cookie Cake can easily be made into individual cookies too.
you will just have to monitor the baking time but it should be around the same time as long as they’re about 1/3 inch thick. serve with a side of cold dairy free milk, put on your fave Netflix show and dang, what a good day.

what all do you need?
- almond flour
- gluten free all purpose flour (i used Trader Joe’s)
- tahini
- 1/3 cup Lakanto Classic Monkfruit Sweetener or sugar it’s a 1:1 substitute
- baking powder
- almond milk
- vanilla extract

as far as tahini, you’re going to need not only a very smooth one but also runny. the two i find most perfect for baked goods are Trader Joe’s brand and soom foods.

i go through tahini super quickly and get a new jar at trader joe’s either once a week or every other week. it’s just a wonderful food for both sweet and savory dishes. the options are endless from making salad dressings to cookie dough. here’s a list of some amazing recipes with tahini from other bloggers! love sharing other blogger’s amazing creations with you!

Vegan Chocolate Chip Tahini Cookie Cake

1.5 cups almond flour
1/2 cup gf all purpose flour
1 tsp baking powder
1/3 cup lakantoย classic monk fruit sweetener or sugar
1/2 cup very runnyย tahini see post for brands i recommend
1/2 cup unsweetened almond milk
1/2 cup chocolate chips
Directions
- mix the dry ingredients in a bowl and then add the wet ones.
- mix well until a thick cookie dough forms and then fold in the chocolate chips.
- add to a greased or parchment paper lined cake pan and bake at 350 degrees for 18 minutes. the texture is in between cake and cookie dough, so you may just want to use a large spoon to cut into it. i cut it into slices and it help up fine but just in case!
