chocolate chip cookies with a cake-like texture….YES please!! i can’t even count how many chocolate chip cookies recipes i’ve made throughout the years and that’s why i love switching things up! this time around, i wanted to create a different texture, not one that you were expecting.
ok, so these aren’t cake mix cookies, they are made from scratch! the cookies are carefully crafted with minimal and wholesome ingredients.
all purpose flour, apple sauce, almond butter and olive oil are a baker’s dream. when mixed together in the proper amounts, the cookies turn out SOOO light + fluffy.
no worries, if you’re more of a chewy cookie person, i actually have ANOTHER chocolate chip cookie recipe in the lineup, but you’ll have to wait a bit (sorrry!).
promise though, if you try Vegan Chocolate Chip Cake Cookies, you won’t even miss the chewy texture of chocolate chips cookies because the cookies are amazing in their own way!
when it comes to sweetener, i used maple syrup! it’s important you don’t sub coconut sugar or some other granulated sugar for it because that will change the texture.
these cookies are not gluten-free although tons of my other recipes are! i have not tried a gluten-free version and you’re more than welcome to but sub at your own risk :).

Vegan Chocolate Chip Cake CookiesCourse: Cookies, DessertsDifficulty: Easy
recipe yields about 10 medium size cookies but you can of course make yours larger or smaller- just monitor the baking time
1 and 1/2 cups unbleached organic all purpose flour
2 tsp baking powder
1/4 cup unsweetened applesauce
2 tbsp extra virgin olive oil
1/4 cup unsweetened dairy free milk
1/4 cup maple syrup
2 tsp vanilla extract
1/4 cup runny almond butter
1/3-1/2 cup chocolate chips
- preheat the oven to 350 degrees. mix the dry ingredients in a bowl and then add in the wet ones.
- mix well until a thick dough forms and then add in the chocolate chips and mix again.
- use a smaller ice cream scoop to evenly distribute the batter and slightly flatten/mold into cookies with clean hands.
- bake at 350 degrees for 15 minutes, let the cookies cool to take their shape and enjoy!!
- store in the fridge or freezer in an airtight container.
