it’s the weekend, and that means it’s time to whip up some delicious treats, so you should totally make The Ultimate Vegan and Gluten-Free Chocolate Chip Cookies! they’re soft, fluffy, and a little bit chewy, plus the cookies have the best flavor. honestly, they’re amazing!

chocolate chip cookies will forever bring me so much joy.

there are so many variations and i love exploring different textures. these cookies are really soft and feel like a cloud.

you will be shocked to know they’re vegan! sometimes, i even surprise myself.

the cookies are made with predominately almond flour! you’re going to need two cups.

there’s also 3 tbsp of tapioca flour in the cookies, and that’s necessary to make the cookies sturdy.

if you don’t have tapioca flour, you can sub with arrowroot powder or cornstarch, which are both found at most grocery stores.

The Ultimate Vegan and Gluten-Free Chocolate Chip Cookies are VERY chocolatey. as you can probably tell, there are a LOT of chocolate chips in the cookies.

in the batter alone, i added between 1/3 and 1/2 cup, and then topped with some more!

you can totally control how much or how little chocolate you want in the cookies. the best way is to just wing it in my opinion. the more chocolate chips the better, right?!

almond flour

tapioca flour

baking powder

baking soda

apple cider vinegar

vanilla extract

maple syrup

coconut yogurt (recommend cocojune brand)

vegan butter

chocolate chips

that’s all you’re going to need, the recipe is as easy as chocolate chip cookie recipes can get! the recipe will yield 9 medium size cookies by the way.

i like to roll the cookies into balls and then flatten them about 1/3 of an inch thick.

Ingredients

  • 2 cups almond flour

  • 3 tbsp tapioca flour

  • 1 tsp baking powder

  • 1/2 tsp baking soda

  • 1 tsp apple cider vinegar

  • 2 tsp vanilla extract

  • 3 tbsp maple syrup

  • 1/3 cup coconut yogurt

  • 3 tbsp melted vegan butter

  • 1/3-1/2 cup dairy free chocolate chips

Directions

  • preheat the oven to 350 degrees.
  • mix the cookie dough together until everything is well-combined and fold in the chocolate chips.
  • shape into balls and flatten to about 1/3 inch thick medium size cookies.
  • bake at 350 degrees for 20 minutes, but a little less time if your cookies are smaller than mine.
  • cool down completely so the cookies set and enjoy!
  • store in the fridge or freezer in an airtight container.
