Peanut Butter Chocolate Chip Cookie Dough Sandwiches seem super decadent, but the sandwiches are made with wholesome ingredients.
from oat flour, almond flour, peanut butter and more, there’s outstanding flavors that are very minimal.
the cookie portion of the sandwiches is just thick cookie dough.
you mold the cookie dough into small-medium size sandwiches and i should be able to make a total of five small/medium ones.

the sandwiches that i made were a little on the larger side, so you can make yours much smaller and get more out of the dough.

as for the sweetener in this recipe, excluding sugar in the chocolate chips, i went with maple syrup, which is my favorite to work with.
also, the main ingredient of the filling is vegan cream cheese! the brand i used is kite hill, but feel free to use what you love or have on hand.
the rest of the filling ingredients are really simple. you only need maple syrup, vanilla extract and peanut butter. we can’t forget the peanut butter!

that’s it! there’s a ton of ingredient overlap between the cookie dough and the filling, so you really only need seven ingredients.
there’s a good chance you have everything on hand too! as for the filling, you can always use a store bought frosting too!
personally, i just love the cream cheese filling because i like to freeze the sandwiches like ice cream sandwiches. once they thaw a bit, they’re perfect!

Peanut Butter Chocolate Chip Cookie Dough Sandwiches

- cookies
2/3 cup + 2 tbsp gluten free oat flour
1 cup almond flour
1/3 cup maple syrup
1/3 cup runny peanut butter (very important it’s runny but if not, thin out the dough with almond milk)
1/2 tbsp vanilla extract
1/3 cup dairy free chocolate chips
- peanut butter cream cheese filling
3/4 cup vegan cream cheese
1/3 cup peanut butter
1 tbsp maple syrup
1/2 tsp vanilla extract
Directions
- mix the cookie dough ingredients together until a thick dough forms and then fold in the chocolate chips.
- shape the dough into cookies.
- add the filling ingredients to a food processor and blend until a smooth consistency forms.
- place the filling in the fridge to set for about 30-45 minutes.
- add a generous amount to the top of one cookie and place another on top to create a sandwich.
- place in the freezer for an hour so the sandwiches set. store in the fridge or freezer in an airtight container. if storing in the freezer, thaw a bit before eating.
