1/3 cup runny peanut butter (very important it's runny but if not, thin out the dough with almond milk)
1/2 tbsp vanilla extract
1/3 cup dairy free chocolate chips
peanut butter cream cheese filling
3/4 cup vegan cream cheese
1/3 cup peanut butter
1 tbsp maple syrup
1/2 tsp vanilla extract
Instructions
mix the cookie dough ingredients together until a thick dough forms and then fold in the chocolate chips.
shape the dough into cookies.
add the filling ingredients to a food processor and blend until a smooth consistency forms.
place the filling in the fridge to set for about 30-45 minutes.
add a generous amount to the top of one cookie and place another on top to create a sandwich.
place in the freezer for an hour so the sandwiches set. store in the fridge or freezer in an airtight container. if storing in the freezer, thaw a bit before eating.
