you really can’t go wrong with chocolate, peanut butter and banana. name a better trio…..there are none!

it’s wild because the ingredients are soooo amazing. real food, reeeeeal good flavor.
the base of the recipe is made with gluten-free all purpose flour, tapioca flour, almond flour and flax meal.
while that sounds like an interesting makeup, it works and the only way i formulated the recipe :). if you make subs, just know it may not turn out the same.
you will need two overripe mashed bananas. there’s a little bit of coconut sugar added for sweetness.
also, to make this bread extraaaa chocolatey, i added some chocolate chunks. that’s optional but i mean, i highly recommend haha.
the peanut butter adds amazing flavor but you can use any runny nut or seed butter. almond butter would be great too!
well, let’s talk about the fudge factor- unreal and 10000/10. the best is when you create a fudgy bread that doesn’t feel raw or undercooked.

Vegan and Gluten-Free Peanut Butter Chocolate Banana BreadCourse: Breads, Breakfast, DessertsDifficulty: Easy
6-8 servings depending on serving size
2 medium size mashed overripe bananas (or sub 1/2 cup pumpkin puree)
1/2 cup runny peanut butter or almond butter
1/2 cup dairy free milk
1 tsp vanilla extract
1/3 cup coconut sugar
2/3 cup cocoa powder
1/3 cup flax meal
1 tsp baking powder
1 tbsp tapioca flour
1 cup almond flour
1/3 cup all purpose gluten free flour
1/2 cup chocolate chunks
- preheat the oven to 350 degrees.
- mix all of the batter ingredients together until a very thick batter forms. fold in the chocolate chunks.
- add to a greased or parchment lined bread loaf pan and bake at 350 degrees for 45 minutes.
- let the bread cool down completely before slicing into the bread.
