The Ultimate Fudgy Vegan Peppermint Brownies

happy holidays from me and The Ultimate Fudgy Vegan Peppermint Brownies! THIS is the brownie recipe you have to make this holiday season.

the recipe is as basic as can be and has such a fun seasonal twist with a peppermint flavor.

a little bit of peppermint extract goes a long way and you only need 1/2 tsp for this entire recipe.

to get a little festive, i topped The Ultimate Fudgy Vegan Peppermint Brownies with some powdered sugar and mini chocolate chips, but you can decorate however you want.

powdered sugar isn’t necessary as The Ultimate Fudgy Vegan Peppermint Brownies are divine just the way they are.

however, if you’re looking for some decadence other than powdered sugar, i suggest a vanilla frosting and maybe some fun holiday sprinkles!

while i have only made the brownies with organic all purpose unbleached flour, you’re welcome to try a gluten free sub, i just can’t guarantee it will turn out the same.

due to the ingredient formulation, a gluten free 1:1 sub might turn out pretty gummy! first, i would try gluten free oat flour if possible.

also, there’s extra chocolate in these brownies baby! i added 1/2 cup of chocolate chunks, which i think is completely necessary for the ultimate fudge factor.

while The Ultimate Fudgy Vegan Peppermint Brownies are sweetened with organic raw cane sugar, you can try a 1:1 sub like lakanto or something!

cocoa powder (used Hershey’s cocoa powder special dark 100% Cacao Cocoa)

coconut yogurt

Ingredients

  • 1 and 1/2 cups organic all purpose unbleached flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/2 cup cocoa powder

  • 1/2 cup organic raw cane sugar

  • 1/3 cup avocado oil

  • 1/3 cup thick coconut yogurt (used cocojune)

  • 2/3 cup dairy free milk

  • 1/2 tsp vanilla extract

  • 1/2 tsp peppermint extract

  • 1/2 cup chocolate chunks or chips

  • powdered sugar for topping

Directions

  • preheat the oven to 350 degrees.
  • mix the brownie ingredients until a thick batter forms, fold in the chocolate chunks and add to an 8 x 8 parchment lined baking pan.
  • bake at 350 degrees for 26 minutes and then let the brownies cool down completely, for about an hour.
  • dust the top with powdered sugar, cut into squares and enjoy! store in the fridge or freezer in an airtight container.

    Happy new year 🎆
    Did you try with Evoo in lieu of avocado oil?
    What type of coconut yogurt works best? Full fat whole milk or otherwise?
    Does the cocoa powder need to be 100%?
    What about regular milk? Does this change the science? (& I realize reg milk => not vegan)
    What about almond extract in lieu of peppermint?
    Had anyone used a rice flour and had yummy results?
    These look so yummy!
