Vegan No Bake Sugar Cookie Bars

’tis the season of sugar cookies, but how about no bake sugar cookie bars? made with better for you, easy and super delicious ingredients?! YES, sounds about right! these gems are a quick and easy dessert to make for the holidays or really, just to have on hand at all times when those dessert cravings hit.

ingredients like creamy cashew butter, maple syrup, vegan butter, coconut flour, and more give the cookies almost a cake-like flavor.

the flavors really are outstanding and you’re going to be shocked at just how easy it is to put the bars together!

sprinkles totally dress up the bars and you can get really fun and festive.

i am pretty limited when it comes to sprinkles because a lot aren’t vegan, but you can always order some cool vegan ones online.

it’s much easier to find what you’re looking for because there isn’t as much grocery store inventory when it comes to vegan sprinkles!

this recipe calls for 1/2 cup of cashew butter, but you can sub it with another one. the only one i don’t recommend is peanut butter.

by the way, the nut butter MUST BE RUNNY! if you absolutely can’t find any, you will have to add almond milk to the dough.

peanut butter will be super overpowering and that’s the main ingredient you will taste.

however, if peanut butter is your jam and that’s all you want to taste, by all means go for it.

almond butter is the next best sub from cashew butter, as it’s mild and you will taste the other ingredients still.

as for a sweetener, ya need something sugary and sticky y’all. maple syrup is the move here, but you could probably use agave too.

i actually like agave, but i don’t find myself using it, so maybe that needs to change!

the recipe calls for 1/3 cup of melted vegan butter and i recommend either miyoko’s, kite hill or earth balance.

there are lots of good ones out there, and use wha you can, but those are always in my rotation.

  • vegan butter

  • cashew butter

  • apple sauce

  • store-bought vanilla frosting

  • sprinkles if you want

Ingredients

  • 1 and 1/4 cup almond flour

  • 2/3 cup coconut flour

  • 1/2 cup runny cashew butter (crazy Richard’s, sprout’s, Trader Joe’s are runny)

  • 1/3 cup vegan butter melted

  • 1/3 cup maple syrup

  • 1 tbsp almond milk

  • 1/2 tsp almond extract

  • 1/2 tsp vanilla extract

  • store-bought vegan vanilla frosting and sprinkles or chocolate chips for topping

Directions

  • mix the bar ingredients together in a bowl and then add to mini bread loaf pans or an 8 inch cake pan.
  • place in the freezer for 1 hour. remove, add frosting and top with sprinkles or chocolate chips.
  • store in the freezer or fridge in an airtight container. if you are storing in the freezer, thaw before eating and enjoy!
