Raspberry Brownie Date Bites

i just love making sweet and simple bite-sized treats, and these Raspberry Brownie Date Bites are absolutely perfect!

chocolate and fruit seems like such a simple combination, but i feel like they mix in the most powerful and delicious way! the depth of flavor here is INCREDIBLE.

the medjool dates help sweeten up this recipe, along with the brownie portion, of course.

the raspberry jam is actually really tart because it’s unsweetened, but that most definitely helps balance out the sweetness.

for the raspberry jam, you absolutely can add maple syrup to sweeten up the otherwise tart flavor. arrowroot powder helps thicken up the jam while giving it a beautiful glossy finish.

i use frozen raspberries to make the homemade jam, but you can use fresh as well! i just happen to always have frozen on hand and they’re typically cheaper.

if you don’t like raspberries, you could make any fruit jam of your liking. i think cherries, blueberries or strawberries would be fantastic, too! ๐Ÿ™‚

the brownie layer adds the perfect amount of chewiness and chocolate to each bite. i use maple syrup to sweeten the brownies. they are no bake by the way!

pro tip, use a silicone ice mold to shape the brownie bites into perfect cubes. if not, you can just roll the brownie dough into balls and place them on top of flattened dates.

there’s also runny nut butter for creaminess and nuttiness in the brownie layer. i do recommend almond butter because it doesn’t overpower the other flavors.

although the brownie layer will have to be placed in the freezer, once you add the chocolate layer on top, you’ll want to store them in a fridge so they stay hardened but not impossible to bite into due to the dates.

the dates are flattened out to help make more of a sturdy surface for all of the layers to lay onto perfectly.

utilizing fruit in the summer for my recipes is one of my favorite things to do! it just feels so refreshing and easy! ๐Ÿ™‚

Raspberry Brownie Date Bites

Ingredients

  • 10 large medjool dates

  • jam
  • 12 ounces frozen raspberries

  • 2 tbsp chia seeds

  • 1 cup water

  • 1 tbsp arrowroot powder

  • brownie layer
  • 2/3 cup cocoa powder

  • 1/3 cup maple syrup

  • 1/3 cup runny nut butter

  • 1/2 cup oat flour

  • 1/3 cup + 2 tbsp almond milk

  • 1 tsp vanilla extract

  • melted chocolate layer
  • 1 cup chocolate chips (used pascha brand)

  • 1 tbsp coconut oil

Directions

  • cook the jam ingredients on medium heat for 10-12 minutes or until jam is thick and stir periodically.
  • mix the brownie layer ingredients and roll them into balls or add to silicone ice cube molds. freeze for 30 minutes. then, add them to the top of flattened out medjool dates.
  • scoop a spoonful of raspberry jam on top of the brownie layer.
  • place in the freezer for 1 hour to set.
  • dunk in the melted chocolate and place in the fridge for 20 minutes or until the chocolate hardens and enjoy!
  • store in the fridge in an airtight container.
