No Bake Peanut Butter and Chocolate Chip Protein Cookies

yields 8-9 large cookies

Ingredients

  • 1 cup gluten free oats

  • 3 scoops vanilla protein (used garden of life brand)

  • 8 large pitted medjool dates

  • 3/4 cup creamy peanut butter

  • 1/2 cup +2 tbsp dairy free milk

  • 1 tsp vanilla extract

  • 1/4 cup thick dairy free yogurt

  • 1/2 cup mini chocolate chips

  • 3/4 cup chocolate chips + 1 tbsp coconut oil melted

Directions

  • add all ingredients but the chocolate chips to a food processor and blend until a thick and grainy cookie dough forms.
  • then, transfer to a bowl and fold in the chocolate chips.
  • use a large ice cream scoop to evenly distribute the dough into cookies.
  • melt the chocolate chips and coconut oil and dunk the cookies in the mixture. place in the freezer for 30 min to harden and enjoy.
  • store in the fridge or freezer in an airtight container and enjoy.
