you will need frozen strawberries, coconut cream and creamy yogurt for the base. i recommend siggi’s plain plant based yogurt.

Vegan Strawberry Cheesecake Ice Cream is lightly sweetened with maple syrup and chunks of no bake cheesecake make this dessert extra indulgent.

the spoonfuls of cream cheese are the perfect addition and you can really use any brand that you want.

for my batch of Vegan Strawberry Cheesecake Ice Cream, i used kite hill!

Vegan Strawberry Cheesecake Ice Cream is made in a food processor and then it has to set in the freezer.

to make sure Vegan Strawberry Cheesecake Ice Cream is extra creamy and not too icy, i like to pull it out of the freezer each hour and stir.

this will make the texture more creamy like ice cream, so i do recommend.

the ice cream needs about 4 hours in total to set! you can then store it in the freezer in an airtight container and let it thaw before eating some.

Vegan Strawberry Cheesecake Ice Cream

Ingredients

  • ice cream
  • 3 cups frozen strawberries

  • one whole can coconut cream (13.5 ounces)

  • 1 cup dairy free yogurt

  • 3-4 tbsp maple syrup

  • 1 tsp vanilla extract

  • no bake cheese cake bites
  • 1/2 cup almond flour

  • 1/3 cup + 2 tbsp gluten free oat flour

  • 1/2 tsp vanilla extract

  • 1/4 tsp almond extract

  • 1/4 cup maple syrup

  • vegan cream cheese
  • peanut butter for topping if wanted

Directions

  • add all ice cream ingredients to a food processor and blend until a thick smoothie consistency forms.
  • mix the cheesecake bite dough ingredients and roll into tiny balls. pour the ice cream into a bread loaf pan and add the cheesecake bites.
  • then, add in some spoonfuls of vegan cream cheese and lightly mix everything through.
  • place the ice cream in the freezer for at least four hours and pull out each hour to stir. store in the freezer in an airtight container and thaw before eating.
