i know, i know, it’s not officially september, but No Bake Vegan Pumpkin Spice Protein Donuts are officially too good to not share!

you can just bookmark these for the near future if you’re not quite ready yet!

hey, i figure if starbucks can launch their PSL, i can for sure post pumpkin spice no bake donuts :).

this is a dramatic statement BUT, No Bake Vegan Protein Glazed Donuts will change your life. all of my no bake protein donuts recipes will!

i also have No Bake Vegan Protein Glazed Donuts AND a chocolate version-both incredible.

no bake donuts are a dessert dream because they’re packed with protein, incredibly delicious and super easy to make.

they’re the perfect treat to keep on hand in the fridge or freezer.

for No Bake Vegan Pumpkin Spice Protein Donuts, the pumpkin flavor comes from pumpkin puree and pumpkin spice!

ah, they’re such a yummy treat and make me super excited for a bit cooler weather!

No Bake Vegan Pumpkin Spice Protein Donuts are made in a food processor, so the prep process is super easy.

they’re sweetened with medjool dates and then for the powdered sugar, i used a monkfruit substitute from lakanto!

good luck eating just one of these at a time because it’s nearly impossible!

alex and i have zero control around donuts in general and these are better than anything you can buy from a donut shop.

you’re going to become obsessed with the fudgy texture and depth of flavor.

the texture is like a rich and decadent no bake bite or really even a piece of fudge!

for the protein portion, you need three whole scoops(33g per scoop). i reccomend using vanilla flavor protein for the best flavor.

No Bake Vegan Pumpkin Spice Protein Donuts

Prep time



NOTES: do NOT use a high powered blender to mix, only a food processor. if you change any ingredients and find your dough to not be firm enough, add some oat flour to thicken.


  • 10 medjool dates

  • 3 scoops plain or vanilla protein powder (33g per scoop)

  • 1 cup almond flour

  • 1 tsp pumpkin spice

  • 1/4 cup runny cashew or almond butter (if it’s not runny, you may need to thin out dough with more dairy free milk)

  • 1 tsp vanilla extract

  • 3/4 cup pumpkin puree (start with 1/2 cup and add the 1/4 if you feel it’s too dry)

  • 1/8 cup dairy free milk

  • powdered sugar or replacement (see text)
    can also make a glaze with 1/2 cup powdered sugar or replacement and 1-2 tbsp dairy free milk


  • add all donut ingredients to a food processor and blend until a thick and smooth dough forms.
  • roll out the dough into thick logs and seal the ends together to form a donut. also, you can simply make donut holes instead!
  • place in the freezer to set for 45 min to one hour.
  • coat the donuts in powdered sugar or a glaze and place back in the freezer for 20-30 min.
  • enjoy and store in the fridge or freezer and thaw a bit before eating.

    1. You could try turning on the food processor first, while there’s nothing in it, and drop one date in at a time while it’s running to blend. You’ll want to ensure the dates do not have any pits in them. Not sure what kind of food processor you have but you’ll probably want one that holds about 11 cups. If that still doesnt work- i don’t know if soaking the dates first would be ok for this recipe, so they’re soft enough to blend. Hope this helps !
