theyโre the perfect treat to keep on hand in the fridge or freezer.
for No Bake Vegan Pumpkin Spice Protein Donuts, the pumpkin flavor comes from pumpkin puree and pumpkin spice!
ah, they’re such a yummy treat and make me super excited for a bit cooler weather!
No Bake Vegan Pumpkin Spice Protein Donuts are made in a food processor, so the prep process is super easy.

they’re sweetened with medjool dates and then for the powdered sugar, i used a monkfruit substitute from lakanto!
good luck eating just one of these at a time because itโs nearly impossible!
alex and i have zero control around donuts in general and these are better than anything you can buy from a donut shop.
youโre going to become obsessed with the fudgy texture and depth of flavor.
the texture is like a rich and decadent no bake bite or really even a piece of fudge!
for the protein portion, you need three whole scoops(33g per scoop). i reccomend using vanilla flavor protein for the best flavor.

No Bake Vegan Pumpkin Spice Protein Donuts

minutesNOTES: do NOT use a high powered blender to mix, only a food processor. if you change any ingredients and find your dough to not be firm enough, add some oat flour to thicken.
Ingredients
10 medjool dates
3 scoops plain or vanilla protein powder (33g per scoop)
1 cup almond flour
1 tsp pumpkin spice
1/4 cup runny cashew or almond butter (if it’s not runny, you may need to thin out dough with more dairy free milk)
1 tsp vanilla extract
3/4 cup pumpkin puree (start with 1/2 cup and add the 1/4 if you feel it’s too dry)
1/8 cup dairy free milk
- powdered sugar or replacement (see text)
Directions
- add all donut ingredients to a food processor and blend until a thick and smooth dough forms.
- roll out the dough into thick logs and seal the ends together to form a donut.
- place in the freezer to set for 45 min to one hour.
- coat the donuts in powdered sugar or the sugar replacement and place back in the freezer for 20-30 min.
- enjoy and store in the fridge or freezer and thaw a bit before eating.
