happy holidays! yay, the official countdown to Christmas begins, so let’s start the season with something vegan, gluten free and best of all, DELICIOUS. Vegan and Gluten Free Peppermint Brownie Cake is made with better for you ingredients and guess what, you only need 7 ingredients for the actual brownie cake!
from the fudgy texture to a taste that’s out of this world- think peppermint patties but brownie form.
oh my goodness, what a treat y’all! Vegan and Gluten Free Peppermint Brownie Cake will become your holiday treat go-to.

this recipe is perfect for a weeknight treat or to serve at a holiday get together. that’s what i’ll be doing!
the base is made with almond flour by the way and i don’t have any subs that i recommend.
if you don’t have almond flour or can’t have it, there are other peppermint recipes on my blog.
another important ingredient is almond butter, it makes this cake so moist!

if you want to use another nut or seed butter go for, but i don’t recommend peanut butter. it’s best to use sunflower seed butter or cashew.
peanut butter might clash a little with the peppermint extract but the others won’t.
while i made the brownie batter into a cake, you can use a square pan and make traditional brownie squares.
the frosting on top is store-bought, and i use simple mills or miss jones. you can totally make your own.

also I added some chopped vegan white chocolate (brand is evolved), a chocolate drizzle and vegan candy canes, which I found at my local grocery store.
you can get really creative with decorations though! it’s a really festive dessert and that’s what i love most.
plus, peppermint and chocolate just go together so well, but if you’re not a fan, just omit the peppermint extract.
you can replace it with vanilla and then you simply have brownie cake!

Vegan and Gluten Free Peppermint Brownie Cake

1.5 cups almond flour
1 tsp baking powder
1/3 cup cacao powder (i used Hersheyβs Special Dark 100% cacao)
1/3 cup very creamy almond butter
2/3 cup unsweetened almond milk
1/3 cup maple syrup
1 tsp peppermint extract
- store-bought vanilla frosting and toppings of your choosing
Directions
- preheat the oven to 350 degrees.
- combine the brownie cake ingredients in a bowl and mix until a batter forms.
- add to a greased 8 inch cake pan (round or square).
- bake at 350 degrees for 23 minutes.
- cool down completely, add frosting and any other toppings. store in the fridge in an airtight container.
