Healthy Vegan Apple Pie Baked Oatmeal

good morning and happy new week friends! let’s start it with something nourishing such as Healthy Vegan Apple Pie Baked Oatmeal!

you know i love starting out the week with a scrumptious new recipe and this week, we have all of the fall vibes.

baked oatmeal has a special place in my heart (and stomach) thanks to it’s coziness and resemblance to dessert haha.

this is hearty, oh so yummy, totally easy to make and the easiest breakfast to meal prep for 4-6 days depending on the serving size!

Healthy Vegan Apple Pie Baked Oatmeal is freezer friendly but only 1/4 of the batch usually makes it there.

i store most of the baked oatmeal in my fridge because we love having a piece for breakfast or a snack.

the โ€œfrostingโ€ on top is just vegan cream cheese! i used kite hill, which is one of my favorites. itโ€™s super creamy and spreads really well!

i chose not to sweeten the cream cheese, but you could absolutely add a tbsp or two of sweetener.

as you can see from the pictures below, i did drizzle maple syrup on top, but of course itโ€™s not necessary.

however, if you are looking for something more on the decadent side, you could always add vanilla frosting to the top to make the bars more dessert-like!

simple mills brand vanilla frosting would be delicious and take these up a notch in terms of indulgence.

the apples are absolutely baked to perfection here and that’s beacuse they’re sautรฉed on the stovetop first.

in order to really get a nice apple pie texture, i recommend doing this.

you only need some cinnamon, maple syrup and coconut oil.

Ingredients

  • baked oatmeal
  • 2 cups old fashioned oats

  • 1/2 cup almond flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1/4 cup flax meal

  • 1 tsp cinnamon

  • 1/4 cup maple syrup

  • 1/2 tbsp vanilla extract

  • 3/4 cup dairy free yogurt

  • 3/4 cup dairy free milk

  • sauteed apples
  • 1 large honeycrisp or 2 smaller ones cut into small cubes

  • 2 tbsp coconut oil

  • 1-2 tbsp maple syrup

  • 1 tsp cinnamon

Directions

  • preheat the oven to 350 degrees. saute the apples in coconut oil with maple syrup and cinnamon for about 10 minutes on medium heat.
  • then, start by mixing all of the ingredients but the apples in a bowl until a thick batter forms.
  • gently fold in the apples and then add the batter to a lightly greased or parchment paper lined 8 x 8 baking pan.
  • bake at 350 degrees for 25 minutes. cool down and add cream cheese to the top if you would like.
