on my IG a couple of weeks ago, i made a strawberry vegan and gluten free pop tart that ending up being a huge hit.
people asked for more flavors and i changed up the ingredient list a little bit.

the base is still made of oat flour and almond flour but i added flax meal for a bit more sturdiness.
when it comes to making pop tarts, you really can choose any kinds of flavors you want. cinnamon sugar has always been one of my favorites next to strawberry, so it was a must-make.
my Healthier Vegan and Gluten Free Cinnamon Sugar Poptart will yield 3 servings, or even two if you want to splurge and not share haha.

while the pop tart is sweet, it isn’t NEARLY as sweet as the original. i would refer to Healthier Vegan and Gluten Free Cinnamon Sugar Poptart as mildly sweet.
if you do want something on the sweeter side, i would suggest adding maple syrup instead of coconut nectar to the filling and icing.
the inside of Healthier Vegan and Gluten Free Cinnamon Sugar Poptart is made with oat flour, coconut nectar, cinnamon, coconut sugar and avocado oil.

it’s a crumbly mixture that bakes perfectly! while the pop tart is sturdy, you may notice the center pieces break more easily! they’re just not quite as firm as the outer pieces and let’s be honest, Healthier Vegan and Gluten Free Cinnamon Sugar Poptart is LOADED.
the icing is made with cashews and it’s the perfect addition to the actual pop tart. you just need a few ingredients to make it!

Healthier Vegan and Gluten Free Cinnamon Sugar Poptart

Ingredients
- giant pop tart ingredients
3/4 cup gluten free oat flour
1/2 cup almond flour
1/4 cup flax meal
1/4 cup coconut sugar
1/3 cup runny almond butter (Trader Joe’s or whole foods brand is runny)
1 tsp vanilla extract
1/3 cup dairy free milk
- filling
1/2 cup coconut sugar
1/8 cup oat flour
1/8 cup avocado oil or coconut oil
1/2 tsp vanilla extract
2 tbsp coconut nectar
1/2 tbsp cinnamon
- icing
3/4 cup raw cashews soaked in hot water for 1 hour then rinsed and drained
1/3 cup dairy free milk
1 tbsp coconut nectar
1/2 tsp cinnamon
Directions
- preheat the oven to 350 degrees. mix the pop tart ingredients until a thick dough forms.
- roll out into two roughly 1/3 inch thick even squares. mix the filling and disperse it on top of the bottom layer of dough.
- place the second layer and top and dip your fork in cooking oil to seal the edges. this way, the dough won’t stick to the fork and ruin the pop tart.
- bake at 350 degrees for 18 minutes and let it cool down completely. blend the icing ingredients in a blender or food processor, place in the fridge to set for 30 minutes and enjoy!

This looks AMAZING! I’m going to make this for a friends birthday this upcoming weekend! Quick question- is there an alternative for the cashews? My friend is allergic to cashews 🙁 Thanks so much!
I made this for my little dude and I this weekend (let’s just say he cried when he first saw it because he thought he was getting the real deal out of the box) but then he took a bite and wouldn’t share!! This is SOOO delish, will 100% be making it again!
