Lightened Up Vegan Blueberry Coffee Cake

if you’re someone who loves a good bakery item for breakfast, then this Lightened Up Vegan Blueberry Coffee Cake is perfect for you!

the coffee cake is full of fresh blueberries, making it taste oh so refreshing and the perfect taste of summer.

treat yourself in the morning to a thick and delicious slice with your coffee, there’s truly nothing better.

Lightened Up Vegan Blueberry Coffee Cake is the perfect amount of sweet and the recipe calls for coconut sugar, so it’s a bit of a lightened up version of the traditional.

vanilla extract also brings out the sweetness of the cake and is the main flavor component besides cinnamon.

the coffee cake is perfectly moist, with a little bit of a crunch from the crumb topping.

the crumb topping has some yummy cinnamon and coconut sugar which elevates the flavor throughout the whole thing!

this recipe only takes about 40-45 minutes to bake in the oven at 350 degrees. i used an 8 x 8 cake pan to bake it in.

you can add a glaze to the finished coffee cake if you’d like, too! a vanilla glaze would go wonderfully on top and i think would mix with the flavors of this best!

if you’re looking to keep a lighter version, then you can always use dairy free vanilla yogurt.
