Amazingly Vegan and Gluten-Free Frosted Snickerdoodles are the only cookies you need this holiday season!
the title says it all! it’s honestly amazing that the cookies are vegan and gluten-free.
they’re soft, pillowy, fluffy, moist and delicious clouds that will melt in your mouth.

no eggs, dairy or gluten are necessary here because Amazingly Vegan and Gluten-Free Frosted Snickerdoodles are made perfectly with plants.
the cookies are made with almond flour and gluten free 1:1 flour.
for the the gluten free 1:1 flour, i used King Arthur if you’re looking to use the same brand!
the almond flour provides necessary healthy fats and the key to success when it comes to the fluffy texture is dairy free yogurt.

you’re going to need a VERY thick and creamy yogurt for this and i used cocojune coconut yogurt.
if you can get ahold of a creamy coconut yogurt, definitely use that but another sub is fine. try to use a brand that’s as thick and creamy as possible!
Amazingly Vegan and Gluten-Free Frosted Snickerdoodles are sweetened with coconut sugar! the top does contain vanilla frosting, which i did buy from the store, but you can totally make your own.
for the frosting, i typically buy simple mills or miss jones!
the cookie dough is rolled in a cinnamon and coconut sugar mixture before it’s baked in the oven for 17 minutes at 350 degrees.

gluten free 1:1 flour
almond flour
baking powder
baking soda
coconut sugar
cinnamon
vanilla extract
extra virgin olive oil or avocado oil
dairy free coconut yogurt (used cocojune)
store bought vanilla frosting (or homemade)

Amazingly Vegan and Gluten-Free Frosted Snickerdoodles

1 and 2/3 cup gluten free 1:1 flour
1 cup almond flour
1 tsp baking powder
1 tsp baking soda
2/3 cup coconut sugar
2 tsp cinnamon
2 tsp vanilla extract
1/3 cup extra virgin olive oil or avocado oil
1 cup creamy coconut yogurt
- 1/3 cup coconut sugar + 1/2 tbsp cinnamon
- store bought vanilla frosting
Directions
- preheat the oven to 350 degrees.
- mix the cookie dough ingredients together and form into thick balls.
- slightly flatten and then coat in the cinnamon sugar mixture.
- bake at 350 degrees for 17 minutes.
- remove the cookies, let them cool down completely and frost.
- store in the fridge or freezer in an airtight container.
