Ingredients
1 and 2/3 cup gluten free 1:1 flour
1 cup almond flour
1 tsp baking powder
1 tsp baking soda
2/3 cup coconut sugar
2 tsp cinnamon
2 tsp vanilla extract
1/3 cup extra virgin olive oil or avocado oil
1 cup creamy coconut yogurt
1/3 cup coconut sugar + 1/2 tbsp cinnamon
store bought vanilla frosting
Instructions
preheat the oven to 350 degrees.
mix the cookie dough ingredients together and form into thick balls.
slightly flatten and then coat in the cinnamon sugar mixture.
bake at 350 degrees for 17 minutes.
remove the cookies, let them cool down completely and frost.
store in the fridge or freezer in an airtight container.
