any dessert with protein in it is a plus in my opinion. you get dessert goodness that feels hearty and that’s the best.
peanut butter, chocolate chips, vanilla protein, dates and more comprise the combo of dreams.

all you have to do is add everything to a food processor! then, the chocolate chips can be folded in.
i added the cookie dough protein fudge to a bread loaf pan because i like my slices super thick, but you can use an 8 x 11 baking tray.
that way, you will have more of protein bars as opposed to fudge bites.

while store bought protein bars are yummy, it is fun to make your own! you can’t go wrong with homemade, especially when they’re as real and tasty as Vegan Cookie Dough Protein Fudge.
the fudge has to set in the freezer but it doesn’t take long. you can either store the fudge in the fridge or freezer by the way.
if you do store Vegan Cookie Dough Protein Fudge in the freezer, just make sure that it thaws a bit before you eat the fudge.

personally, i prefer the fridge because the fudge stays firm enough but also soft and fudgy, ya know, just the way it should be.
you could totally customize this fudge by the way. if you don’t want to use chocolate chips, sprinkles or dried fruit would also be great options.
it totally depends what you’re in the mood for, but the base is versatile and will taste yummy with many different add ins.
if you’re looking to get kind of decadent and more on the splurge-y side, you could try rainbow sprinkles and vanilla frosting such as simple mills on top. that would be very decadent.

Vegan Cookie Dough Protein Fudge

hourrecipe yields 8 fudge squares
Ingredients
1 cup oat flour
3 scoops vanilla protein powder (31g) per scoop
7 large medjool dates
3/4 cup dairy free milk
1 tsp vanilla extract
1/2 cup runny peanut butter
1/2 cup chocolate chips
Directions
- add all ingredients but the chocolate chips to a food processor.
- blend until a thick dough forms and fold in the chocolate chips.
- add to a parchment lined bread loaf pan and place in the freezer for one hour.
- cut into squares and enjoy! store in the fridge or freezer in an airtight container.

I love this recipe! Most homemade protein bars have too much nut butter and are higher in fat than I prefer but these are great! I didn’t have vegan chocolate chips so I used raisins instead and then added cinnamon to the dough (inspired by seeing the recipe for your oatmeal raisin banana bread this morning). These will be the perfect little snack before my workouts in the morning!
