Vegan Puppy Chow Cups

Vegan Puppy Chow Cups are when your no bake vegan dessert dreams become a reality! puppy chow is one of the greatest comfort desserts of all time and now you can enjoy it with vegan ingredients that are better for you. plus, they’re super easy to make!

when i think of the bests kinds of vegan desserts, anything with peanut butter and chocolate comes to mind.

that’s what i love most- i am totally a peanut butter and chocolate gal through and through. fruit desserts don’t appeal to me the same way.

the powdered sugar component is just the icing on the cake. there is nothing like that trio, maybe that’s why puppy chow is so addicting.

you’re going to need your basic Chex cereal, or something super similar. i bought the rice chex cereal from Whole Foods!

this crunchy and sweet classic has been made into convenient cups for you and let me tell ya, it’s a lot less messy lol.

this recipe is extra fabulous because it’s predominately made in the food processor, well, the base is at least.

you add your chex, peanut butter, maple syrup, vanilla extract, coconut oil and oat flour to the food processor.

then, you blend away until you get this semi-sticky and grainy texture. it’s honestly amazing and it was hard not to eat the whole bowl.

next up, you can add the mixture to parchment paper muffin cups and place them in the fridge.

then, you can melt your chocolate with some coconut oil until it’s thick yet runny.

place that top layer of chocolate on the base and back into the fridge they go for like 10 minutes or so.

you want the chocolate to set a little bit before you dust some powdered sugar on top.

the cups can be stored in the fridge in an airtight container and good luck getting them to last more than a few days because they are indeed addicting.

Vegan Puppy Chow Cups

recipe yields 8-10 cups depending on how much you fill them

Ingredients

  • base layer
  • 4 cups chex rice cereal

  • 1/2 cup runny peanut butter

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1/4 cup room temp coconut oil

  • 1/4 cup oat flour

  • chocolate layer
  • 1 cup chocolate chips

  • 2 tbsp coconut oil

  • powdered sugar for dusting the tops of cups

Directions

  • add all base layer ingredients to a food processor.
  • process until a thick, semi-sticky and grainy texture forms.
  • add a few tbsp worth to parchment paper muffin cups. then, place in the fridge for 20 minutes or so.
  • melt the chocolate and coconut oil together and then add to the tops of the base layer.
  • place back in the fridge for 10-15 and then dust with powdered sugar. add back to the fridge to let the cups set an hour or so.
  • store in the fridge in an airtight container.
