Ingredients
base layer
4 cups chex rice cereal
1/2 cup runny peanut butter
1/3 cup maple syrup
1 tsp vanilla extract
1/4 cup room temp coconut oil
1/4 cup oat flour
chocolate layer
1 cup chocolate chips
2 tbsp coconut oil
powdered sugar for dusting the tops of cups
Instructions
add all base layer ingredients to a food processor.
process until a thick, semi-sticky and grainy texture forms.
add a few tbsp worth to parchment paper muffin cups. then, place in the fridge for 20 minutes or so.
melt the chocolate and coconut oil together and then add to the tops of the base layer.
place back in the fridge for 10-15 and then dust with powdered sugar. add back to the fridge to let the cups set an hour or so.
store in the fridge in an airtight container.
