hey hey hey! happy friday everyone! let’s celebrate the weekend with Healthy No Bake Vegan Birthday Cake Bars, which my hubby rates 20/10. to be fair, he loves just about everything i make, but i can tell when something is really exceptional in his book.
Healthy No Bake Vegan Birthday Cake Bars are made with the realest and simplest ingredients out there.
with almond flour, oat flour, maple syrup and more, everything about the bars is amazing.
personally, my favorite part aside from the taste is the texture, it’s really incredible y’all. it’s cake-like in a no bake kind of way- so chewy and soft!

how cute are the sprinkles!? for this recipe, i used Watkin’s brand but Whole Foods also sells them. the color isn’t as great as these though.
the only thing that’s really missing is frosting, but i wanted to keep these on the lighter side since that’s what so many people request!
in terms of sweetener, i used maple syrup and 1/3 cup to be exact, but there’s no other substantial sweet component.
the sprinkles have a tiny bit of sugar but not enough to make a difference in my opinion! you can of course add frosting if you would like :).

here’s the entire list of ingredients you need, and it’s short!
- almond flour
- oat flour
- almond butter
- vanilla extract
- maple syrup
- dairy free milk
- sprinkles
yes, it really is that easy to make Healthy No Bake Vegan Birthday Cake Bars! you can store these gems in the fridge or freezer.
in order for them to set, the bars have to stay in the fridge for a few hours and then they’re ready for cutting into bars.
also, if you store them in the freezer, just be sure to let the bars thaw before you eat one or they will be rock hard.

if you wanted to make these a different flavor, you totally could. for example, lemon cake bars would be SO YUMMY.
i would start with adding 1/4 cup of fresh lemon juice to the batter and a little bit extra oat flour. you can do a taste test and adjust from there.
also, chocolate chips would be so yummy if you don’t have sprinkles! want to make them super fancy? add some mini marshmallows AND chocolate chips.
honestly, so many combinations would work, it’s just such an easy and delicious base :).

Healthy No Bake Vegan Birthday Cake Bars

1/2 cup almond flour
1 and 1/2 cups oat flour
1/3 cup maple syrup
1/3 cup runny almond butter
1/4 cup dairy free milk (add more if dough is too dry)
1/2 tbsp vanilla extract
- sprinkles for topping
Directions
- add all ingredients but the sprinkles to a food processor and blend until a thick dough forms. if you want sprinkles dispersed in the batter then fold them in.
- add the dough to a parchment lined bread loaf pan and flatten.
- top with sprinkles by pressing them into the dough at the top.
- place in the fridge for a few hours, cut into bars and enjoy. store in the fridge or freezer in an airtight container.
