Vegan Chocolate Chip Peanut Butter Bars

oooooh another day another amazing vegan recipe. also, happy earth day! i made this completely plant-based recipe to celebrate Mother Earth today in partnership with Endangered Species Chocolate. Vegan Chocolate Chip Peanut Butter Bars are decadent slices of heaven that are good for the soul.

chocolate chips and peanut butter are a combination like no other. i mean, is there a greater one of all time? i think not!

indulge in these completely vegan, delicious, easy to make and all around fabulous bars any day of the week.

of course i’m obsessed with ESC chocolate bars, but i also LOVE their Oat Milk + Dark Chocolate Chips and that’s what i used for the bars.

Vegan Chocolate Chip Peanut Butter Bars are PERFECT for dessert or a snack every day of the week. you can store them in the fridge or freezer in an airtight container and they hold up well!

it’s important that we have some kind of dessert on hand at all times and this is a favorite. no funky ingredients, easy as can be to put together aaaaand tastes heavenly.

the oat milk baking chips are so smooth and sweet like milk chocolateβ€”but dairy free!!

who is a fan of oat milk? it’s the secret behind ESC’s deliciously different dark chocolate chips, giving them a creamier texture and unusually sweet flavor with no excess sugar, woooo.

ok, so subs! this is the only way i’ve ever made the bars, so sub at your own risk my friends. you could definitely swap the peanut butter though for another nut or seed butter.

Vegan Chocolate Chip Peanut Butter Bars

Ingredients

  • 1 and 1/2 cups organic unbleached all purpose flour

  • 1/2 tbsp baking powder

  • dash of pink Himalayan salt or sea salt

  • 1/4 cup apple sauce

  • 1/3 cup maple syrup

  • 1/2 cup very creamy peanut butter

  • 1/4 cup melted coconut oil

  • 2/3 cup unsweetened almond milk

  • 1/3 cup Endangered Species Chocolate Oat Milk Baking Chips

Directions

  • preheat the oven to 350 degrees. first, mix the wet ingredients and then add in the dry.
  • mix well until a thick batter forms and fold in the chocolate chips.
  • add to a greased 8 x 11 baking pan and bake at 350 degrees for 27 minutes.
  • cool down completely, cut into bars and enjoy!
  • store in the fridge or freezer in an airtight container.
