HAPPY MONDAY and happy Vegan and Gluten-Free Vanilla Cake Donuts day. we’re just all getting back to work and our routines, so it’s only natural that we reward ourselves with some out of this world donuts. you won’t believe how much healthier these donuts are for you and the taste is better than what you find at bakeries.
as you can probably tell, i don’t have a lot of donut recipes on the blog, and i don’t know why that is.
donuts are SO fun and easy to make too, i usually just opt for cupcakes, cakes and cookies.


well there’s a new recipe in town now and the donuts are PERFECT for breakfast, dessert or even a snack.
the coolest part is the ingredient makeup. there’s only 1/3 cup maple syrup in the entire recipe.
obviously, the glaze contains some sugar, but it’s not even necessary to add if you don’t want to.
for the glaze, i just took store bought vegan vanilla frosting and melted it with a little bit of coconut oil to achieve a glaze texture. i like simple mills brand!

just a heads up, the donut batter/dough is really thiiiick and sticky. not too sticky to work with but it is sticky.
fill in the donut tins to the top and then wet your hands slightly to press down the top. this will ensure the ridges and donuts are more even.
after they bake and cool down, you’re going to remove them from the donut pan and flip them anyways to the smooth side!

the donuts themselves are made with gluten-free all purpose flour. you see, i’m on a roll here with the gluten-free desserts.
not too long ago, i took a poll on my IG and so many of you in my community eat gluten-free, so i hope these recipes help.
the donuts are dense baby! that’s how i like my baked goods though. they do feel a little bit on the fluffy side too.
honestly, the texture is very similar to cake, and that’s why i call them Vegan and Gluten-Free Vanilla Cake Donuts.

here’s everything you need to make my Vegan and Gluten-Free Vanilla Cake Donuts
- gluten-free all purpose flour
- baking powder
- baking soda
- vanilla extract
- vinegar (used red wine but apple cider vinegar works)
- runny almond butter (SUPER important that it’s runny, solid will ruin the texture)-Trader Joe’s brand and Whole Foods are runnier
- maple syrup
- dairy free milk
- flax egg

Vegan and Gluten-Free Vanilla Cake Donuts

1 and 1/4 cup gluten free all purpose flour
1 tsp baking powder
1 tsp baking soda
1/2 tbsp vinegar
1 tbsp vanilla extract
1/4 cup runny almond butter
1/3 cup maple syrup
1 flax egg (1 tbsp flax meal + 3 tbsp water)
1/2 cup dairy free milk
- 1/3 cup vanilla store bought frosting mixed with 1 tbsp melted coconut oil for glaze
Directions
- preheat the oven to 350 degrees.
- mix the donut batter until it’s super thick and well combined. add to a greased donut pan and fill the donut molds to the top.
- then, slightly wet your fingers and press down on the top to even out the donuts.
- bake at 350 degrees for 20 minutes. cool down completely, add the glaze and enjoy! store in the fridge or freezer in an airtight container.
