the brownies are made with delicious ingredients that are wholesome and packed with rich flavor.

to decrease the amount sugar in this recipe, you could use chocolate chips with no added sugar or ones with just a little bit.

here’s everything you need to make Super Fudgy Vegan and Gluten Free Sweet Potato Brownies

mashed sweet potato (used hannah sweet potato)

runny peanut butter or nut/seed butter

cocoa powder

vanilla extract

maple syrup

dairy free milk

gluten free oat flour

dairy free chocolate chips

while i baked the brownies in a larger bread loaf pan, you can totally use an 8 x 8 inch square pan, just decrease the baking time a bit.

one of the most important steps when it comes to making Super Fudgy Vegan and Gluten Free Sweet Potato Brownies is to let them cool completely before slicing into them.

this will enable the brownies to become firm. i actually placed the brownies in the fridge for an hour or so after they cooled on the counter.

Super Fudgy Vegan and Gluten Free Sweet Potato Brownies

Ingredients

  • 1 and 1/2 cups mashed sweet potato (mash as finely as possible)

  • 1/2 cup runny peanut butter

  • 1/2 cup cocoa powder

  • 2 tsp vanilla extract

  • 1/2 cup maple syrup

  • 1/3 cup dairy free milk

  • 2/3 cup gluten free oat flour

  • 1/3-1/2 cup dairy free chocolate chips

  • see text for “frosting” i used

Directions

  • preheat the oven to 350 degrees.
  • mix the brownie ingredients in a food processor until a thick and very smooth batter forms. fold in chocolate chips if desired.
  • bake at 350 degrees for 23 minutes. cool down for an hour on the counter and place in the fridge for 30 minutes to an hour.
  • frost the brownies if desired and then cut into slices. store in the fridge in an airtight container and enjoy.
