mashed sweet potato (used hannah sweet potato)
runny peanut butter or nut/seed butter
dairy free milk
gluten free oat flour
dairy free chocolate chips
while i baked the brownies in a larger bread loaf pan, you can totally use an 8 x 8 inch square pan, just decrease the baking time a bit.

this will enable the brownies to become firm. i actually placed the brownies in the fridge for an hour or so after they cooled on the counter.

Super Fudgy Vegan and Gluten Free Sweet Potato BrowniesCourse: Cookies, Desserts
1 and 1/2 cups mashed sweet potato (mash as finely as possible)
1/2 cup runny peanut butter
1/2 cup cocoa powder
2 tsp vanilla extract
1/2 cup maple syrup
1/3 cup dairy free milk
2/3 cup gluten free oat flour
1/3-1/2 cup dairy free chocolate chips
- see text for “frosting” i used
- preheat the oven to 350 degrees.
- mix the brownie ingredients in a food processor until a thick and very smooth batter forms. fold in chocolate chips if desired.
- bake at 350 degrees for 23 minutes. cool down for an hour on the counter and place in the fridge for 30 minutes to an hour.
- frost the brownies if desired and then cut into slices. store in the fridge in an airtight container and enjoy.
