Vegan and Gluten Free Caramel Apple Cookies are just what we all need to help with the Sunday scaries!

while apples do indeed give fall vibes, this recipe is not an introduction to fall recipes!

i had a ton of apples on hand and these cookies came to mind!

youโ€™re going to be obsessed withย Vegan and Gluten Free Caramel Apple Cookiesย and theyโ€™re unbelievably vegan + gluten free.

the texture is wildly good because the inside is perfectly soft and the outside is harder and chewy.

when you think of the texture of a perfect cookie, my guess is the aforementioned comes to mind!

no eggs, no dairy, just a perfect combination of gluten free oat and almond flour among other things.

the caramel apples that top the cookies are arguably just as good as the cookies themselves.

theyโ€™re cooked in a mixture of vegan butter, maple syrup, dairy free milk, vanilla extract and cinnamon. 

thereโ€™s caramel leftover too, so you can drizzle the extra on top of the cookies!

hereโ€™s everything you need to makeย Vegan and Gluten Free Caramel Apple Cookiesย 

1 cup almond

3/4 cup gluten free oat

1 tsp baking

2 tsp vanilla extractย 

2 bobโ€™s red mill egg replacers (2 tbsp egg replacer + 4 tbsp water)

1/2 cup melted vegan butter1/4 cup maple syrup

2 smaller apples cut into cubes

1/3 cup vegan butter2 tsp cinnamonย 

2 tsp vanilla extract

2 tbsp maple syrup

1/2 cup dairy free milkย

Ingredients

  • Cookies
    1 cup almond
    3/4 cup gluten free oat flour
    1 tsp baking
    2 tsp vanilla extractย 
    2 bobโ€™s red mill egg replacers (2 tbsp egg replacer + 4 tbsp water)
    1/2 cup melted vegan butter
    1/4 cup maple syrup

    Caramel Apples
    2 small-medium apples of your choosing cut into cubes
    1/3 cup vegan butter
    2 tsp cinnamonย 
    2 tsp vanilla extract
    2 tbsp maple syrup
    1/2 cup dairy free milkย 

Directions

  • mix the cookie dough together until everything is well-combined.
  • use a large ice cream scooper to evenly distribute the batter and slightly flatten. my cookies were definitely on the larger side!
  • bake at 350 degrees for 20-22 minutes depending on size and thickness. i baked mine for 22 and used a large ice scooper as mentioned above.
  • add all caramel apple ingredients in a pan and bring to a boil. cook on medium high heat for about 7 minutes or until apples are tender and caramel thickens.
  • place on top of the cookies once they have cool down and enjoy! best eaten the same day!
