this Vegan Date Pretzel Bark is the perfect combination of sweet and salty!

when i saw Lina from @thathealthjunkie’s recipe, i was immediately drawn to it and wanted to make a similar version with pretzels and almond butter.

i know i know, but mary, you love peanut butter so much! yes, yes i do but you can totally use whatever nut butter you like!

a recipe like this is very versatile too and you can get creative when it comes to toppings.

from cookie dough to freeze dried fruit, cookies and nuts, the options are plentiful.

seriously, this recipe is absolutely delicious AND super easy to make! the goeey and fudgy medjool dates make the most INCRED base layer.

crunchy and salty pretzels make date bark out of this world… combine it with the sweet medjool dates, chocolate chips and nutty almond butter and you’re going to get a craving for this nonstop.

the Vegan Date Pretzel Bark only takes 45 minutes to freeze and you can keep in the fridge after you’ve had your first taste, of course, to keep it nice and fresh.

definitely don’t store it in the freezer because the dates will become rock hard and potentially break your teeth.

the fridge is perfect for storing because the dates become firm but perfectly chewable and the chocolate stays solid!

i flattened out the medjool dates to make a base and spread the almond butter on top.

once you do that, just pour the melted chocolate chips with coconut oil on top and then place your pretzels on there too.

this super easy snack is full of extremely wholesome ingredients and perfect if you need something on the go, too!

Ingredients

  • 12 medjool dates

  • 1/3 cup creamy almond butter

  • 1 cup chocolate chips

  • 1 tbsp coconut oil

  • 1 cup pretzels

Directions

  • flatten out the medjool dates and spread almond butter on top.
  • then, melt the chocolate chips and coconut oil and pour on top of the dates and almond butter.
  • top with pretzels and place in the freezer for 45 minutes.
  • remove, break apart and store in the fridge in an airtight container.
