if the answer is yes, then you HAVE to try my Vegan No Bake Granola Protein Cookies!

y’all these are INCREDIBLE! i can’t even believe how tasty they are. you can use any bag of granola too!

the recipe is forgiving, so if the granola you used has different ingredients than mine, that’s ok, it will still work!

i used purely elizabeth vanilla chocolate chip and it is perfection in this recipe.

ok, who wouldn’t love a massive chocolate chip cookie that is nutrient-dense AND keeps you really full?

that’s why i love incorporating protein powder in many of my desserts, they are so much more satisfying.

while there are typically several ingredients already in store-bought granola, this recipe requires very few.

you just need the granola, nut butter, dairy free yogurt, dairy free milk and protein powder.

that’s easy enough, right?! then, you can blend everything together in a food processor until a cookie dough forms.

after you form the dough into cookies, you can create a shallow hole in the center and stuff it with nut butter if you would like!

this is not necessary and can be omitted of course, but i love a nut butter surprise in the center of cookies.

lastly, Vegan No Bake Granola Protein Cookies are topped with melted dark chocolate and can harden in the freezer.

while you can store them in the freezer, i store mine in the fridge! just let the cookies thaw a bit before you eat them.

store-bought granola

runny nut butter (cashew, peanut, almond)- can sub seed butter

dairy free yogurt

protein powder (about 60g or two scoops)

dairy free milk

chocolate chips

coconut oil

Ingredients

  • cookie dough
  • 2 cups granola-see text for brand i used

  • 1/2 cup runny nut butter

  • 1/2 cup dairy free yogurt

  • 2 scoops of vanilla or chocolate protein powder(about 60g)

  • 1/4 cup dairy free milk (can add more if dough is too dry- just taste test)

  • nut butter for the center
  • melted chocolate
  • 3/4 cup chocolate chips

  • 1 tbsp coconut oil

Directions

  • add the cookie dough ingredients to a food processor and blend until a thick dough forms.
  • mold the dough into cookies the size of your choosing and then form a shallow hole in the center.
  • add a little bit of nut butter (i mix mine with a tiny bit of coconut oil so it hardens well) and place in the freezer for 30 minutes.
  • melt the chocolate and coconut oil and then top the cookies. place back in the freezer for 30 minutes and then enjoy!
