Vegan Snickers Inspired Granola Bark

you read the title correctly, i made Vegan Snickers Inspired Granola Bark and it’s one of those things you just cannot pass up on, no matter what. if you’re looking for something that tastes out of this world, like better than candy but made with real ingredients, make this!

upbeetandkaleingit’s new favorite recipe is Vegan Snickers Inspired Granola Bark. the bottom layer is peanut butter granola.

the middle layer is date caramel and the top layer is a chocolate shell.

it’s perfectly delicious, crafted with love and a little bit messy but completely worth the sticky date fingers.

the granola layer is baked of course and it’s really simple! you just need gluten free old fashioned oats, runny peanut butter, avocado oil or melted coconut oil and maple syrup.

then, the date caramel is just large medjool dates, dairy free milk, vanilla extract and coconut oil or avocado oil.

it gets blended in a food processor until a thick caramel forms. once the granola completely cools down, the caramel is added.

then, Vegan Snickers Inspired Granola Bark is placed in the freezer for 30-45 minutes to firm up a bit.

next, the chocolate shell is poured on top, placed back in the freezer for an hour and then it’s time to break the granola bark apart!

this is where is will get a little messy because the date caramel isn’t completely firm but it’s not supposed to be!

personally, i don’t mind slightly sticky fingers if it’s means i get to eat one of the most delicious things on planet earth. that’s not an exaggeration by the way, wait until you try it!

while i recommend eating this the same day you make it, you can store it in an airtight container in the fridge for a couple of days. just note, the granola might get a little soggy due to the caramel if you store in the fridge.

i would make this for a get together if possible so it gets eaten the same day, but you can always see how long it lasts in an airtight container. i would not store it more than a couple of days though.

gluten free old fashioned oats (used one degree organics)

maple syrup

runny peanut butter

avocado oil or melted coconut oil

medjool dates

vanilla extract

dairy free milk

chocolate chunks or chips

peanuts for topping if wanted

Ingredients

  • granola
  • 2 and 1/2 cups gluten free old fashioned oats

  • 1/2 cup runny peanut butter

  • 1/3 cup maple syrup

  • 1/4 cup melted coconut oil or avocado oil (used avocado)

  • date caramel
  • 1 and 1/2 cups medjool dates (soak in hot water for 20 minutes then drain so they’re soft)

  • 1/2 cup dairy free milk

  • 1 tsp vanilla extract

  • 1/8 cup melted coconut oil or avocado oil

  • chocolate shell
  • 1 and 1/4 cup chocolate chips or chunks

  • 2 tbsp coconut oil

Directions

  • preheat the oven to 350 degrees.
  • mix the granola ingredients together until a sticky mixture forms and layout on a parchment lined baking tray.
  • bake at 350 degrees for 15 minutes and then rotate the tray 180 degrees. bake another 10 minutes.
  • let the granola cool down completely and add all caramel ingredients to a food processor. blend until a thick caramel consistency forms.
  • add to the top of the cooled down granola and place in the freezer 30-45 minutes.
  • melt the chocolate ingredients together, pour over the caramel layer and place back in the freezer one hour to set.
  • break apart and then place back in the freezer for 10 minutes. enjoy every bite and store in the fridge in an airtight container!
