No Bake Vegan Swiss Rolls

extra extraaaa excited about No Bake Vegan Swiss Rolls because i used to eat them every now and then growing up! they were SUPER yummy and it was such a treat to have one. now, after going vegan and trying to eat as many whole foods as i can, a lightened up version was in my future. let me tell ya, this recipe does not disappoint.

ok, i’m really proud of my No Bake Vegan Swiss Rolls! the recipe only took me two times to perfect AND the taste is so freakin’ legit!!

seriously, i really nailed the taste on this one guys. for being no bake and using all real ingredients, i’m beyond impressed with this one.

have you ever tried one? a chocolate swiss cake roll is a swirled chocolate sponge cake with cream and topped with a chocolate ganache!

in order to not make the roll too sweet, i left the chocolate ganache part out but feel free to add some!

the chocolate portion is sweetened with maple syrup and the center is filled with vanilla frosting. i used store bought-simple mills vanilla but you can use whatever you want!

if you’re wondering whether this is hard to roll up, it’s not! the dough is super malleable and it was a breeze to make. in fact, this recipe is made in the food processor!

you just add all of the ingredients (minus the frosting) and blend until this thick dough forms.

then, you can roll it out on parchment paper into a rectangle and add the vanilla frosting.

i was pretty generous on the frosting but you can add as much or as little as you would like!

the ingredients used are very simple and here’s everything you need!

  • almond flour
  • oat flour

  • cocoa powder

  • maple syrup

  • almond butter

  • vanilla extract

  • vanilla frosting

i recommend using almond butter because the taste is more mild and won’t be overpowering. you really want the chocolate and vanilla frosting flavors to pull through.

you can definitely try another type of nut or seed butter but i can’t guarantee the taste will be as on point as it is with almond butter.

an important step in the process is to place the log in the fridge or freezer once it’s completely rolled up. i placed mine in the freezer for about 20 minutes, which was enough time for the roll to set.

No Bake Vegan Swiss Rolls

Ingredients

  • chocolate dough
  • 1 cup almond flour

  • 3 tbsp oat flour

  • 1/2 cup cocoa powder

  • 1/3 cup maple syrup

  • 1/3 cup runny almond butter

  • 1 tsp vanilla extract

  • 1/8 cup dairy free milk

  • 3/4 cup store bought vanilla frosting or however much you want (see text for brand)

Directions

  • add the chocolate dough ingredients to a food processor and blend until a smooth consistency forms.
  • add to parchment paper and roll out about 1/4-1/3 inch thick.
  • then, spread out the vanilla frosting all through the chocolate dough and carefully roll into a log.
  • carefully place in the freezer for 30 minutes before cutting into pieces. store in the fridge or freezer in an airtight container and enjoy!
