this delicious and creamy Vegan BLT Pasta Salad is absolutely perfect for the summertime when you want a light yet filling lunch! it’s also perfect to serve for any summer holiday gatherings or get-togethers!

the avocados, tomatoes, red onions, and lettuce make this dish deliciously refreshing. the true star is the dressing though!

avocados are full of nutrients like vitamin E and magnesium while the tomatoes are full of vitamin C!

the vegan bacon makes this dish complete! i used the light life tempeh vegan bacon and it is seriously sooo yummy!

from the saltiness of the vegan bacon, to the creaminess of the avocados, to the crunchiness of the red onions and the softness of the pasta – this dish is packed with beautiful textures and flavors that mix extremely well with one another!

the dressing is super delicious too! i used vegan mayo and vegan cream cheese to make it nice and creamy, while also adding garlic cloves, onion powder, and ground mustard to give it a little bit of a bite.

Lightened Up Vegan BLT Pasta Salad

Ingredients

  • salad
  • 1 and 1/2 boxes cooked gluten free pasta

  • 2 medium avocados cut into cubes (halved)

  • 1 packet of vegan bacon of your choosing (used light life tempeh)

  • 1 bag shredded romaine lettuce

  • 1/2 thickly sliced red onion

  • dressing
  • 1/3 cup vegan mayo (chosen foods)

  • 1/3 cup vegan cream cheese with a few tbsp water to thin it out

  • 1/2 tbsp stone ground mustard

  • 1 tbsp liquid aminos

  • 1-2 grated garlic cloves

  • 1/2 tsp onion powder

Directions

  • cook the pasta according to package directions and once it’s cooked down, add to a large mixing bowl with the other salad ingredients.
  • whisk the dressing ingredients and pour over the salad.
  • serve cold or at room temp and enjoy!
  • store in the fridge in an airtight container.
