Lightened Up Vegan BLT Pasta SaladCourse: Snacks
5-7 servings depending on portion size
1 and 1/2 boxes cooked gluten free pasta
2 medium avocados cut into cubes (halved)
1 packet of vegan bacon of your choosing (used light life tempeh)
1 bag shredded romaine lettuce
1/2 thickly sliced red onion
1/3 cup vegan mayo (chosen foods)
1/3 cup vegan cream cheese with a few tbsp water to thin it out
1/2 tbsp stone ground mustard
1 tbsp liquid aminos
1-2 grated garlic cloves
1/2 tsp onion powder
- cook the pasta according to package directions and once it’s cooked down, add to a large mixing bowl with the other salad ingredients.
- whisk the dressing ingredients and pour over the salad.
- serve cold or at room temp and enjoy!
- store in the fridge in an airtight container.
