Vegan No Bake Brownie Cheesecake

this easy and delicious Vegan No Bake Brownie Cheesecake is one dessert you’ll be craving for weeks after you make it!

i absolutely LOVE cheesecakes but would much rather have to not bake one.

the cheesecake filling is perfectly thick and rich with lots of cocoa powder for all of you chocolate lovers! the filling is also mixed with nutty cashews and peanut butter – yum!

if you’re not a fan of peanut butter, you can totally swap it out for another nut or seed butter.

the crust is perfectly thick with chocolate chips, runny nut butter, healthy and yummy oats and dates.

even though Vegan No Bake Brownie Cheesecake is super rich and decadent, you’ll still be able to get some nutrients, too!

i topped this dessert with some dairy-free ice whipped cream and melted chocolate, but you can eat it as is or add whatever toppings you like! 🙂

Vegan No Bake Brownie Cheesecake

Ingredients

  • crust
  • 8 pitted large medjool dates

  • 1/3 cup chocolate chips

  • 1/4 cup cocoa powder

  • 1 cup gluten free oats

  • 1/2 cup dairy free milk

  • 1/2 cup runny peanut butter or any nut butter

  • 4 tbsp coconut flour

  • filling
  • 8 oz vegan cream cheese

  • 1 and 1/4 cup cashews

  • 1/4 cup peanut butter

  • 1/3 cup cocoa powder

  • 1/3 cup almond milk

  • 1/3 cup maple syrup

Directions

  • Add all crust ingredients to a food processor and blend until a thick dough forms.
  • Spread out on a parchment lined 8 x 8 baking pan.
  • Freeze for 30 minutes and make the filling.
  • Add all filling ingredients to a blender and blend until a thick and smooth consistency forms.
  • Pour on top of the crust and freeze for 3 hours.
  • Cut into slices, top with your favorites, and enjoy!
  • Store in the freezer in an airtight container and thaw before eating.
