salads can be so boring, blah and overall tasteless, but not this one. perfect for summer time and the warm weather.

the veggies are so fresh, the edamame adds protein, sweet mango is the best addition and the dressing is so creamy.

i live for a good creamy peanut dressing! between the garlic, liquid aminos, sriracha and sesame oil, everything about the dressing is stellar.

it mixes so well with the crunchy veggies and sweet mango.

for a grain, i used brown rice but you could use so many different things, even pasta!

farro, quinoa, millet and bulgar wheat would all work well too.

if you would like, you can add some baked tofu for even more protein! this is a versatile salad.

other veggies could replace what i used too! you could use bell pepper and even roast some sweet potatoes.

Crunchy Veggie and Edamame Salad with Peanut Dressing

if eaten as an entree, serves about 4. side salad will serve more!

Ingredients

  • salad
  • 2 cups carrot ribbons

  • 1 cup shredded red cabbage

  • 2 cups sliced cucumbers

  • 1 large mango cut into small cubes

  • 1/3 cup green onions

  • 1 cup cooked brown rice

  • 1 cup steamed and cooled edamame

  • dressing
  • 1/4 cup runny peanut butter

  • 2 tbsp liquid aminos

  • 2 tbsp sesame oil (toasted works)

  • 1 tsp sriracha

  • 2 minced garlic cloves

  • 1/2 tsp (or more) onion powder)

  • water to thin it out (maybe 1/4 cup)

Directions

  • add all of the veggies and edamame to a large mixing bowl.
  • whisk the dressing ingredients together until a thick dressing forms.
  • pour over the salad and coat well!
  • store the salad in the fridge in an airtight container and enjoy!
