Ingredients
salad
2 cups carrot ribbons
1 cup shredded red cabbage
2 cups sliced cucumbers
1 large mango cut into small cubes
1/3 cup green onions
1 cup cooked brown rice
1 cup steamed and cooled edamame
dressing
1/4 cup runny peanut butter
2 tbsp liquid aminos
2 tbsp sesame oil (toasted works)
1 tsp sriracha
2 minced garlic cloves
1/2 tsp (or more) onion powder)
water to thin it out (maybe 1/4 cup)
Instructions
add all of the veggies and edamame to a large mixing bowl.
whisk the dressing ingredients together until a thick dressing forms.
pour over the salad and coat well!
store the salad in the fridge in an airtight container and enjoy!
