Blueberry Superfood No Bake Donut Holes

hot Florida weather means more and more no bake desserts, and Blueberry Superfood No Bake Donut Holes are the best of the best. you need minimal ingredients to make them, including a food processor, so this recipe is super convenient.

when it comes to no bake desserts, keeping them as healthy as possible is important to me but so is a delicious taste.

i have no desire to bite into something bland, and Blueberry Superfood No Bake Donut Holes are the opposite of that.

instead, they’re super rich, flavorful and definitely feel indulgent.

you won’t believe they’re only sweetened with maple syrup. 1/3 cup does the trick and it’s the perfect amount.

as for the blueberries, you’re going to need freeze dried ones and they don’t provide much sweetness, but rather, a tart component.

it’s necessary though to balance out the sweetness of the maple syrup. the blueberry flavor shines through too, it’s just divine.

you could also use freeze dried strawberries, raspberries, apples or any fruit that you like!

hemp hearts, chia seeds and antioxidant-packed blueberries are the stars of the recipe, but you’ll need some other ingredients.

maple syrup, vanilla extract, chia seeds, hemp hearts and cashew butter are also in the donut holes.

if you don’t want to use cashew butter, you could totally use almond butter, peanut butter or sun butter.

just keep in mind that if you use peanut butter, the taste will overshadow the dried blueberries. you will likely not taste them nearly as much.

however, then you would have sort of a pb and blueberry jam type of vibe going and i wouldn’t mind that a bit.

if you would like, you can melt some coconut butter for a glaze, i totally recommend. it adds a great flavor component and who doesn’t like an icing!?

i find the donut holes to be pretty sweet, so i don’t think the coconut butter needs any additional sweetener, but you’re always welcome to add some.

Blueberry Superfood No Bake Donut Holes are best stored in the fridge or freezer! they don’t last long in our house, so we go with the fridge lol.

Ingredients

  • 1 cup almond flour

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1/3 cup hemp hearts

  • 1/4 cup chia seeds

  • 1/3 cup runny cashew or almond butter

  • 1.2 ounces (one pack) freeze dried blueberries

  • 3/4 cup melted coconut butter

Directions

  • add all ingredients but the coconut butter to a food processor and blend until a thick and grainy dough consistency forms.
  • roll the dough into donut holes and add to a parchment paper lined plate.
  • place the donut holes in the freezer for 20 minutes.
  • then, coat the donut holes in the melted coconut butter and place back in the freezer for another 10-15 minutes to set.
  • store in the fridge or freezer in an airtight container and enjoy!
