No Bake Protein Cookie Dough Cake (No Refined Sugar)!

Prep time




  • 9 large medjool dates
    2 scoops vanilla protein powder (about 29g per scoop)
    1/2 cup gluten-free oat flour
    1/2 cup runny peanut butter
    1/4 cup + 2 tbsp dairy-free milk (adjust if needed)
    1 tsp vanilla extract
    1/2 cup chocolate chips for mixing in the dough
    additional melted chocolate for topping (about 1 cup chocolate chips)


  • prepare the dates: remove the pits from the medjool dates if they haven’t been pitted already.

  • combine ingredients:
    -in a food processor, combine the pitted dates, vanilla protein powder, oat flour, runny peanut butter, dairy-free milk, and vanilla extract.
    -blend until a smooth dough forms. if the peanut butter isn’t runny enough, you can add more dairy-free milk to achieve the desired consistency.

  • fold in chocolate chips:
    -once the dough is smooth, fold in the chocolate chips using a spatula or spoon. make sure they’re evenly distributed throughout the dough.

  • freeze:
    -transfer the cookie dough mixture to a lined baking dish or tray. spread it evenly and place it in the freezer for at least one hour to firm up.

  • top with melted chocolate:
    -after the cookie dough has set in the freezer, melt additional chocolate if desired and pour it over the top of the cookie dough layer. spread it evenly using a spatula.

  • chill:
    -return the dish to the freezer for a few minutes to allow the melted chocolate to set.

  • serve:
    -once the chocolate has hardened, you can slice the cookie dough cake into pieces and serve. enjoy your delicious no-bake protein cookie dough cake!

    1. unfortunately, those wouldn’t be a good replacement for dates! figs could work but you would have to adjust the amount!

  1. *I substituted the vanilla protein for a unflavored egg white protein powder. *And did not put chocolate chips in the “dough” because it was already sweet enough. Did a thin layer of melted sugar free chocolate chips on top.

    It was absolutely delicious. I’ll be making this on repeat for the foreseeable future. Next batch I’ll add some coconut and pecans. I can’t wait to make them again.
