Plant Based Protein Packed Chickpea Salad Stuffed Cucumbers

are you looking for a nutritious and satisfying SAVORY snack that’s also easy to prepare?

look no further than these protein-packed chickpea salad stuffed cucumbers!

not only are they delicious, but they’re also loaded with plant-based protein, making them a perfect choice for balancing blood sugar levels and keeping you feeling full and energized throughout the day.

let’s talk about the plant-based protein content first.

chickpeas, the star ingredient in this recipe, are a fantastic source of protein for those following a plant-based diet.

they’re packed with essential amino acids, making them a complete protein source.

by incorporating chickpeas into your snacks, you’re not only adding a dose of protein but also benefiting from their fiber content, which aids in digestion and helps regulate blood sugar levels.

ohhh and then hemp seeds are a nutritional powerhouse that adds a boost of goodness.

these tiny seeds are rich in omega-3 and omega-6 fatty acids, which are essential for heart health and brain function.

they’re also a great source of plant-based protein, containing all nine essential amino acids that our bodies need but cannot produce on their own.

one of the reasons why these stuffed cucumbers make such a great snack for balancing blood sugar is their low glycemic index.

unlike snacks higher in refined sugars and carbohydrates, these cucumbers won’t cause a spike in blood sugar levels, thanks to their fiber-rich and protein-packed filling.

now, let’s talk about the delish combination of ingredients in the chickpea salad!

i use a mixture of vegan mayo and thick coconut yogurt to create a creamy and tangy dressing for the chickpeas.

however, you have the flexibility to choose one or the other based on your preferences or dietary restrictions.

i find the salad tastes much better with mayo, but you can always swap that for hummus!

both options provide creaminess and flavor to the salad, while the garlic powder, everything but the bagel seasoning, and dijon mustard add extra flavor!

when it comes to taste and texture, these stuffed cucumbers are a combo of crunchy, creamy, and savory, ugh they’re so good.

the crispness of the cucumber pairs perfectly with the creamy chickpea salad filling, creating the best contrast of textures with every bite!

the seasoning adds a pop of flavor, making each mouthful burst with deliciousness.

while stuffed cucumbers are a great way to enjoy this protein-packed chickpea salad, there are plenty of other ways to incorporate it into your meals.

try spreading it on crackers for a quick and easy sandwich or snack.

you can also serve it on top of salad greens for a light and refreshing meal, or use it as a filling for wraps or pita pockets.
