when the work day is done, i’m guessing the last thing you want to do is cook a gourmet meal that takes two hours. you probably want something easy, healthy and convenient. look no further than Dairy-Free Buffalo Sauce Mac n Cheese!
when i say that i’m obsessed with this sauce….i mean it. wow, the creaminess is unreal and then buffalo sauce just gives it the perfect amount of spiciness.
cashews comprise the base of the sauce along with a few other ingredients, which you likely have on hand, except for maybe the buffalo sauce.
good news is you can even leave it out if you’re not a fan because then this just becomes a yummy homemade regular ole vegan mac n cheese.
when it comes to dairy free sauces, let’s just say that i have tried just about everything out there. from store-bought to making my own with tofu, potatoes, parsnips and more.
have to say though….nothing compares to soaked cashews! every last time i get a perfectly creamy end result and i can create any kind of flavor! just add your favorite spices + condiments and more!
everything listed above works too though, and i have delicious sauces with those foods as bases. if given the choice though, probs going to choose cashews!
this sauce is super easy to put together and took about five minutes. if you want to take a shortcut and not have to soak raw cashews for a few hours, just place them in a microwave safe mug with water and cook for 2 minutes.
this just speeds up the process of course.
also, you can use a blender or food processor to make the sauce but i think a high power blender will ensure the creamiest, silky-smooth result. here’s everything you need!
- raw cashews
- buffalo sauce
- unsweetened plain almond milk
- garlic powder
- onion powder
- nutritional yeast
- sea salt
yes, it really is that simple! for the buffalo sauce, i recommend either tessemae’s or moore’s! use whatever you like though or have on hand. i just always check to make sure the buffalo sauce i buy is vegan.

Dairy-Free Buffalo Sauce Mac n CheeseCourse: 30 Minutes, Lunch & Dinner, Main Dishes, PastaDifficulty: Easy
1 cup raw cashews soaked and drained
3 tbsp buffalo sauce
3/4 cup plain unsweetened almond milk
2 tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
1/4 tsp sea salt or to taste
- cook 1 lb of pasta of choice according to package directions. i used brown rice pasta.
- for the sauce either soak the raw cashews in hot water for a couple of hours or warm them up in water in the microwave for 2 minutes.
- then, drain the cashews and add to a blender with the remaining sauce ingredients. blend until a smooth consistency forms.
- mix in with the cooked pasta and enjoy!
