happy friday everyone! it may be hot hot hot in Florida, but that didn’t stop me from making one of my all time favorite soups! The Best Vegan White Lasagna Soup is a creamy dream that’s packed with veggies, incredible flavors and a stellar nutrient profile.

The Best Vegan White Lasagna Soup is a throw everything in the pot recipe.

yes, truly, you throw everything in the pot! no sautรฉing, no fancy appliances, no nothing other than the ingredients, a large pot and a stirring spoon.

easy lunches, dinners and desserts are what i strive for as you know, so it’s going to be a simple recipe if it’s on this blog.

there’s no marinara in my lasagna soup, hence the name of it, but you are more than welcome to add some!

as aforementioned, you can throw everything into the pot but the cream cheese, dijon mustard, nutritional yeast and lasagna noodles, which are added later in the cooking process.

once the soup comes to a boil, you just have to stir it periodically! it’s a no fuss type of recipe but you should definitely monitor it.

the creamy nature of the soup with vegan cream cheese as the secret ingredient really makes it unique and beyond satisfying.

for this recipe, i do recommend using a high quality vegan cream cheese. i really haven’t met a brand i didn’t like, but i can tell a difference in savory dishes particularly.

for this recipe, if you can, i recommend using Monty’s or Miyoko’s. the latter is offered at tons of grocery stores and Monty’s is easy to order :).

trust me, a high quality cream cheese will make all the difference! as far as the other cheesy component, that’s nutritional yeast!

as a vegan, my kitchen is stocked with nutritional yeast 24/7, 365 because it is a must in so many of my savory recipes.

  • vegetable broth

  • plain unsweetened almond milk

  • water

Ingredients

  • 1 box lasagna noodles of your choosing (I used gluten free ones)

  • 3 cups water

  • 2 and 1/2 cups unsweetened plain almond milk or dairy free

  • 32 ounces vegetable broth

  • 8 ounces sliced mushrooms

  • 12 ounces broccoli florets

  • 1 cup frozen peas

  • 1 tbsp minced garlic

  • 1/2 tbsp onion powder

  • 1 tsp paprika

  • 1/2 tsp sea salt (or more to taste)

  • 3/4 cup vegan cream cheese- see text for brands

  • 1/4 cup nutritional yeast

  • 1/2 tbsp dijon mustard

Directions

  • add all ingredients but the lasagna noodles, cream cheese, dijon mustard and nutritional yeast to a large pot and bring to a boil.
  • once the soup comes to a boil, cook on medium heat for about 20 minutes and stir periodically. then, add the vegan cream cheese, mustard and nutritional yeast.
  • stir well and cook another 20 minutes.
  • then, break apart the lasagna noodles bit and add to the soup. cook for another 15 minutes until they’re tender and fully cooked through.
  • enjoy and store in the fridge in an airtight container!
