Hearty Vegan Marinara (8 Ingredients & 30 min)

hearty? vegan? marinara? pasta? what what what?! yes, please, count me in. weekday dinners are always something super easy because by the time i’m done with work and Alex comes home, i don’t feel like making something elaborate. Hearty Vegan Marinara (8 Ingredients & 30 min) is a recipe that the whole family will enjoy and made it’s made in no time!

between chickpeas and “meaty” portobello mushrooms, this sauce has got it going on. it’s incredibly easy to put together too!

there’s no sautΓ©ing involved. all you have to do is throw everything into a large pot or pan (used my Our Place pan) and let everything cook away.

yes, you will have to stir periodically to prevent the sauce from sticking to the bottom but i think this is a fair trade off for the no fuss recipe!

new pasta dishes are the most requested dishes people ask for! it makes perfect sense because an easy pasta dish is ideal for a quick, balanced and plant based lunch or dinner.

a good sauce is everything though, because as you know, pasta by itself is so plain. in order to add flavor and enough heartiness, i like to add veggies and/or beans.

the chickpeas add protein and they’re really delicious with the other flavors but feel free to use something else.

try navy beans, pinto beans or even tempeh if you’re just wanting some protein!

with all of the pasta options these days, the varieties are positively endless and i love it!

while i loveeee pastas made from beans, brown rice, quinoa and more, this time around, i wanted something a little bit more traditional.

last week, i bought some rigatoni made from whole wheat flour from Whole Foods and oh my gosh, it was perfect for this recipe. it holds together SO WELL! check out the pictures, the shape is perfect.

here’s everything you’re going to need!
  • pasta of your choosing!

  • portobello mushrooms

  • chickpeas

  • green onion

  • tomato sauce

  • tomato paste

  • vegetable broth

  • minced garlic

  • Italian seasoning

this of course excludes your salt and pepper to taste! i always love adding a little bit and doing a taste test!

Ingredients

  • pasta
  • 1 lb rigatoni or pasta of your choosing

  • marinara
  • 6 ounces portobello mushrooms cut into small pieces

  • one 15 ounce can chickpeas rinsed and drained

  • 1/3 cup chopped green onion

  • 15 ounce can tomato sauce

  • 6 ounce can tomato paste

  • 2 cup vegetable broth

  • 1 tbsp finely minced garlic

  • 1/2 tbsp Italian seasoning

  • salt and pepper to taste!

Directions

  • cook the pasta according to the package directions.
  • for the marinara, add all ingredients to a large pan and stir well. cook on medium heat for 20-22 minutes once it comes to a boil. stir periodically.
  • then, turn the heat down to medium low and cook another 10 minutes while still stirring periodically to prevent sticking/burning to the pan. you can cook yours a little longer if it’s not thick enough!
  • serve with the rigatoni and enjoy! you can store in the fridge in an airtight container.
