sweet potatoes are one of my all time favorite foods. they’re tied with avocados and chocolate and it’s pretty difficult to choose! whether you’re cooking savory or baking something sweet, sweet potatoes go with just about everything. Vegan Cheesy Sweet Potato Taquitos are jam packed with the best sweet potato mixture you’ll ever try!
dip these cheesy plant based gems in guac and salsa if you would like! they’re honestly perfectly delicious just on their own though!

to give the cheesy sweet potato mixture an extra boost of flavor, i roasted the sweet potatoes in the oven. you can definitely boil yours, which i did last time however they won’t be as flavorful.
by baking the sweet potatoes in the oven, you get a deliciously sweet almost caramelization on the outside and the flavor pulls through in the cheese.
if you don’t like sweet potatoes or just want to use Idaho, russet or Yukon gold, go for it! any potato will work and the flavors + texture will still be amazing.

as far as tortillas, i used organic whole wheat ones that i found at Whole Foods! i have totally used gluten free ones before like siete and haven’t had any issues.
depending on what the tortillas are made of, they may be more delicate meaning you shouldn’t stuff them as much. the ones i used are pretty durable though!
Vegan Cheesy Sweet Potato Taquitos can totally be eaten for lunch or dinner, but i think they make a great appetizer!

all in all, i was able to make 6 reasonably sized taquitos! i stuffed them pretty well, so you can always make more if you use less filling.
in terms of cooking, the taquitos are pan fried in avocado oil on the stove top. you can bake them if you would like, i’m just not sure at what exact temp + timing!
maybe next time i can try making baking the taquitos.

here’s everything you’re going to need! this excludes sides of course like guac, salsa or whatever you’re serving them with!
- tortillas of your choosing
- sweet potatoes
- vegan shredded cheese
- vegetable broth
- garlic
- vegan cream cheese
- onion powder
always salt and pepper to taste of course!
any vegan cream cheese will work and in terms of shredded cheese, i think vegan pepper jack is the best! miyokos and vevan both have great ones!
if you can’t get ahold of any, i think cheddar would be the next best option!

Vegan Cheesy Sweet Potato Taquitos

minutescooking time is 25 minutes for baking the sweet potatoes only.
Ingredients
2 medium size sweet potato with skin removed and cut into cubes
1/2 cup vegan pepperjack cheese
1/2 cup vegetable broth
1/4 cup vegan cream cheese
1 tsp minced garlic
1/2 tsp onion powder
- 6 medium-large whole wheat tortillas or any kind of your choosing
- cooking oil for pan-frying (used avocado)
Directions
- preheat the oven to 400 degrees. bake the sweet potato cubes for 25 minutes until tender and slightly caramelized.
- add to a food processor with the rest of the filling ingredients and blend until well combined.
- add about 1/4 cup of filling to each tortilla and roll them up.
- add about 1.5-2 tbsp cooking oil to a large pan and give it a few seconds to heat up.
- add the filled taquitos seam side down and cook the them on each side (probably a couple of minutes) until golden brown and crispy (monitor closely!).
- serve with your favorites and store in the fridge in an airtight container!
