Vegan Cheesy Sweet Potato Taquitos

Ingredients
2 medium size sweet potato with skin removed and cut into cubes
1/2 cup vegan pepperjack cheese
1/2 cup vegetable broth
1/4 cup vegan cream cheese
1 tsp minced garlic
1/2 tsp onion powder
6 medium-large whole wheat tortillas or any kind of your choosing
cooking oil for pan-frying (used avocado)
Instructions
preheat the oven to 400 degrees. bake the sweet potato cubes for 25 minutes until tender and slightly caramelized.
add to a food processor with the rest of the filling ingredients and blend until well combined.
add about 1/4 cup of filling to each tortilla and roll them up.
add about 1.5-2 tbsp cooking oil to a large pan and give it a few seconds to heat up.
add the filled taquitos seam side down and cook the them on each side (probably a couple of minutes) until golden brown and crispy (monitor closely!).
serve with your favorites and store in the fridge in an airtight container!
