Nourishing Vegan Jackfruit Stew will be your new go to dinner if you’re a fan of jackfruit, i’m sure of it! jackfruit is so good and adds a ton of hearty goodness to this flavorful stew. while stew may be more popular for colder weather, this one is perfect all year round in my opinion. the whole family will love it!

do you know what jackfruit is? i first tried it about five years ago.

now, it’s super popular and so many brands, restaurants and cafes incorporate jackfruit into tons of meals.

it’s honestly an awesome meat substitute and it takes on whichever flavors you cook it with, which is great. here, it’s going to be more mild because of the flavors, but it’s wonderful for barbecue.

ah ok, so what exactly is jackfruit?! according to health line, jackfruit is a unique tropical fruit that has increased in popularity in recent years.

it has a distinctive sweet flavor and can be used to make a wide variety of dishes. itโ€™s also very nutritious & might have several health benefits.

jackfruit is so often used as aย meat substitute due to its texture, which is comparable to shredded meat! that’s why it’s popular in barbecue, because it can be shredded easily.

if you’ve had jackfruit and just aren’t a fan, you could omit it altogether, but i recommend substitutes to add more heartiness.

tofu, tempeh, mushrooms, or store-bought meat alternatives would all work just fine! you just need something that’s going to add more substance.

ok, so i used canned jackfruit and there was no way i was going to use anything but lol. a whole jackfruit is intimidating and looks like a lot of work haha.

the jackfruit i found is Native Forest from Whole Foods, and it looks like you can get it on Thrive Market too.

here’s everything you’re going to need for the stew!

  • onion

  • garlic

  • extra virgin olive oil

  • canned jackfruit

  • broccoli florets

  • sliced carrots

  • unsweetened plain almond milk (or any plain dairy free)

  • vegetable stock

  • chili powder

  • ground turmeric

  • paprika

  • ground mustard seed

  • sea salt to taste

Nourishing Vegan Jackfruit Stew

Ingredients

  • 3/4 cup chopped onions

  • 1 tbsp minced garlic

  • 2 tbsp extra virgin olive oil

  • two 14 ounce cans (28 ounces total) jackfruit rinsed and drained

  • 3 cups broccoli florets

  • 16 ounces sliced carrots

  • 3 cups plain and unsweetened almond milk

  • 32 ounces vegetable stock

  • 1 tsp chili powder

  • 1/2 tsp ground turmeric

  • 1/2 tsp paprika

  • 1/2 tsp ground mustard seed

  • sea salt to taste

Directions

  • sautรฉ the onions and garlic in olive oil on medium high heat for two minutes.
  • then, add the remaining ingredients. stir the stew and once it comes to a boil, turn the heat down to medium and cook for about 45 minutes.
  • serve with rice or whatever you like and enjoy!
  • store in the fridge in an airtight container.
