Ingredients
3/4 cup chopped onions
1 tbsp minced garlic
2 tbsp extra virgin olive oil
two 14 ounce cans (28 ounces total) jackfruit rinsed and drained
3 cups broccoli florets
16 ounces sliced carrots
3 cups plain and unsweetened almond milk
32 ounces vegetable stock
1 tsp chili powder
1/2 tsp ground turmeric
1/2 tsp paprika
1/2 tsp ground mustard seed
sea salt to taste
Instructions
sauté the onions and garlic in olive oil on medium high heat for two minutes.
then, add the remaining ingredients. stir the stew and once it comes to a boil, turn the heat down to medium and cook for about 45 minutes.
serve with rice or whatever you like and enjoy!
store in the fridge in an airtight container.
