Vibrant and Hearty Vegan Winter Salad

this is NOT a sad salad! ah, enjoy these vibrant flavors of our Vibrant and Hearty Vegan Winter Salad, a perfect fusion of fresh ingredients that actually tastes amazing.

featuring thinly sliced green cabbage and lacinato kale as the crisp base, this salad embraces the sweetness of pears, the savory notes of vegan bacon, and the rich creaminess of crumbled vegan feta.

topped with chopped pecans and dates, every bite is such a great combo of textures and tastes.

the salad is drizzled with our AMAZING, and i mean amazing maple-pomegranate dressing.

Vibrant and Hearty Vegan Winter Salad would absolutely be a great dish for holiday get-togethers, but it’s also perfect to nosh on during the week.

let’s talk about the dressing because it is phenomenal!

this silky blend combines the smooth richness of avocado oil with the heartiness of hummus, creating a creamy texture that marinates the greens so well.

minced garlic cloves add a subtle, savory undertone, while liquid aminos contribute a touch of umami.

the dressing is elevated by the sweet and tangy notes of pomegranate juice, or you can opt for cranberry juice for a similar burst of flavor!

to bring it all together, a hint of maple syrup provides a delicate sweetness and you don’t need much.

feel free to customize this vegan kale and cabbage salad to suit your preferences or accommodate dietary restrictions if you have any.

if you’re not a fan of kale, spinach or arugula can be excellent substitutes, providing a different texture and flavor profile.

for a different twist, swap the dates for dried cranberries or raisins!

if vegan bacon isn’t your thing, maybe use smoked tofu or tempeh for a smoky flavor.

you can also experiment with different nuts like almonds or walnuts, in place of pecans.

in case vegan feta isn’t available, try using a dairy-free goat cheese or mozzarella.

this versatile salad definitely welcomes substitutions, allowing you to tailor it to your liking and make it uniquely yours :).

Recipe by Mary

Prep time

4-6 servings depending on portion sizes

  • ingredients:

3 cups thinly sliced green cabbage (preferably savoy)
2 cups lacinato kale, thinly sliced
    2 pears, cut into pieces
1 cup cooked vegan bacon, broken into small pieces
    3/4 cup chopped pecans
    1 cup crumbled vegan feta
    3/4 cup chopped dates

    1/4 cup avocado oil
    1/3 cup hummus
    2 minced garlic cloves
    1 tbsp liquid aminos
1/4 cup pomegranate juice (cranberry juice works as well)
    1 tbsp maple syrup

  • in a large mixing bowl, massage your kale and cabbage with a small amount of avocado oil for a minute or so. this will break down the fibers.
  • combine the thinly sliced green cabbage and lacinato kale.
add the cut pears, cooked vegan bacon pieces, chopped pecans, crumbled vegan feta, and chopped dates to the bowl with the cabbage and kale.
  • in a separate bowl, whisk together the avocado oil, hummus, minced garlic cloves, liquid aminos, pomegranate juice (or cranberry juice), and maple syrup to make the dressing.
  • pour the dressing over the salad ingredients in the large mixing bowl.
toss the salad gently to ensure all ingredients are well coated with the dressing.
allow the salad to sit for a few minutes to let the flavors meld together.
  • serve the salad in individual bowls or on a platter, and enjoy your delicious and nutritious creation!
feel free to adjust ingredient quantities to suit your taste preferences. enjoy your salad!
