the Make You Glow Vegan Salad is indeed what it sounds like- a nourishing salad that will make you glow from the inside out.
it is absolutely packed with nutrients and tons of fresh produce.
there’s also plenty of healthy fats in this salad and even protein from edamame.
fresh strawberries are a reminder that summer is coming soon and they mix so well with the other salad ingredients. if you don’t want to use strawberries, blueberries would be a great replacement.

vegan feta cheese adds some salty goodness to my Make You Glow Vegan Salad and the creaminess is such a dreamy component.
avocado provides extra creaminess too and it’s such a must in every salad.
ok, so you know the salad ingredients are incredible, but it’s really the dressing that makes the salad shine.

it’s drinkable haha, like good enough that you will want to add it to every savory dish you eat in the future.
the secret is teriyaki sauce! i love to find a good and clean one at my grocery store.
i recommend Big Tree Farms if you can get ahold of some but any will do :).

avocado
strawberries
edamame
red onion
cucumber
sunflower seeds
teryaki sauce
rice vinegar
stone ground mustard
peanut butter
avocado oil
garlic powder
liquid aminos
if you don’t have certain ingredients like sunflower seeds for example, you can replace them with any seed or nut.
the same applies to produce! there are multiple vegetables that would be amazing in here. carrots, red bell peppers and roasted sweet potatoes are just a few more ideas.

this is a salad that is even better the next day, which usually is not the case with salads.
i do recommend eating Make You Glow Vegan Salad within two days though because the avocado does eventually get mushy.
Make You Glow Vegan Salad is perfect to serve at any get together, especially with the warmer weather approaching.
Make You Glow Vegan Salad is also perfect for dinner because it’s super filling and healthy.

Make You Glow Vegan Salad

- salad
1 and 1/2 cups edamame
10 oz strawberries cut in half
2 medium size avocados
2 large cucumbers cut into quarters
1/3 cup chopped red onion
8 ounces crumbled vegan feta
1/3 cup sunflower seeds
- dressing
2 tbsp teriyaki sauce
1 tbsp rice vinegar
1/2 tbsp stone ground mustard
1/4 cup + 1 tbsp runny peanut butter
3 tbsp avocado oil
1/2 tbsp liquid aminos
a little bit of low sodium veggie broth to thin it out (start with 1/4 cup and add more if need be)
Directions
- add all salad ingredients to a large mixing bowl.
- whisk the dressing ingredients until well-combined and pour over the salad ingredients.
- mix well and enjoy at room temp or chilled! store in the fridge in an airtight container.
