Ingredients
salad
1 and 1/2 cups edamame
10 oz strawberries cut in half
2 medium size avocados
2 large cucumbers cut into quarters
1/3 cup chopped red onion
8 ounces crumbled vegan feta
1/3 cup sunflower seeds
dressing
2 tbsp teriyaki sauce
1 tbsp rice vinegar
1/2 tbsp stone ground mustard
1/4 cup + 1 tbsp runny peanut butter
3 tbsp avocado oil
1/2 tbsp liquid aminos
a little bit of low sodium veggie broth to thin it out (start with 1/4 cup and add more if need be)
Instructions
add all salad ingredients to a large mixing bowl.
whisk the dressing ingredients until well-combined and pour over the salad ingredients.
mix well and enjoy at room temp or chilled! store in the fridge in an airtight container.
