Burrito Inspired Vegan Salad is one of those salads where you just can’t put your fork down. yes, it is just THAT good, i promise.
this recipe is inspired by a burrito that Alex and i ate at a restaurant a couple of years ago, it’s just never left my mind.
since it’s hot and i am craving all of the salads, i decided to make a burrito inspired salad!
there are so many goodies in here. from taco seasoned tofu to black beans, tomatoes and a dreamy dressing, there’s nothing not to swoon over.
Burrito Inspired Vegan Salad is really easy to make too! the only cooking required involves quinoa and sautéing the taco seasoned tofu.
both of those are really easy to cook and only take a matter of minutes.
you don’t have to use quinoa by the way, rice works just as well! don’t have rice? how about pasta! this would make a dreamy pasta salad too!
there are so many ways to get creative when it comes to salads.
the dressing is what really stands out to me! the base is a coconut yogurt and i highly recommend using the following brands- either cocojune or culina.
the taste of these two dairy free yogurts is exceptional for all things savory. some store bought vegan yogurts do not work well with savory dishes.
if you can find either of those two, i would very much recommend using one.
then, i add taco seasoning and buffalo sauce to the dressing, it’s so darn good! you can drizzle some fresh lime at the end too, it’s just heavenly!

Burrito Inspired Vegan SaladCourse: 30 Minutes, Lunch u0026amp; Dinner, Salads
1 bag lettuce of your choosing
1 cup black beans rinsed and drained
1 and 1/2 cups grape or cherry tomatoes halved
1 cup crushed tortilla chips
1/3 cup diced red onion
1 and 1/2 cups cooked quinoa
2 medium avocados
- sauteed tofu
14 ounces crumbled tofu
3 tbsp avocado oil for cooking
2 tsp taco seasoning
1 tbsp buffalo sauce
5 ounces dairy free plain yogurt (recs in text)
2 tbsp buffalo sauce
1 tsp taco seasoning
1/2 tsp garlic powder
1/3 cup vegetable broth
sea salt and pepper to taste
- cook the quinoa according to package directions.
- sauté the tofu with seasoning and other ingredients in avocado oil on medium heat for 4-5 minutes.
- assemble the salad and add all ingredients.
- whisk the dressing ingredients together, pour over the salad, mix well and enjoy! store in the fridge in an airtight container.
