Ingredients
salad
1 bag lettuce of your choosing
1 cup black beans rinsed and drained
1 and 1/2 cups grape or cherry tomatoes halved
1 cup crushed tortilla chips
1/3 cup diced red onion
1 and 1/2 cups cooked quinoa
2 medium avocados
sauteed tofu
14 ounces crumbled tofu
3 tbsp avocado oil for cooking
2 tsp taco seasoning
1 tbsp buffalo sauce
dressing
5 ounces dairy free plain yogurt (recs in text)
2 tbsp buffalo sauce
1 tsp taco seasoning
1/2 tsp garlic powder
1/3 cup vegetable broth
sea salt and pepper to taste
Instructions
cook the quinoa according to package directions.
sauté the tofu with seasoning and other ingredients in avocado oil on medium heat for 4-5 minutes.
assemble the salad and add all ingredients.
whisk the dressing ingredients together, pour over the salad, mix well and enjoy! store in the fridge in an airtight container.
